Bar Recipe
This homemade version of the viral Dubai Chocolate Bar is an easy-to-make recipe with 3 main ingredients and chocolate molds. The result is a crunchy sweet and unique chocolate bar!

Ingredients
2 ounces white chocolate chips
12 ounces milk chocolate chips divided
¼ cup unsalted butter
8 ounces kataifi shredded dough finely chopped
2 (7-ounce) jars pistachio butter
¼ cup tahini

Instructions
Place the white chocolate in a microwave-safe bowl. Microwave at 30 second intervals. Stir the chocolate in between each 30 seconds until all the chocolate is melted. Drizzle with a fork into 2 16-ounce chocolate molds and set aside in the freezer for 10 minutes.
Place 10 ounces of the chocolate chips in another microwave-safe bowl. Microwave at 30 second intervals. Stir the chocolate in between each 30 seconds until the chocolate is mostly melted. Fold in the remaining 2 ounces of chocolate chips and stir to combine. Pour about half the chocolate over the white chocolate drizzle and use a pastry brush to make sure it evenly covers the bottom and sides. Allow it to set at room temperature for 5 minutes, then place in the freezer for 20 minutes.

Meanwhile, melt the butter in a large skillet over medium-high heat. Add the kataifi and cook, stirring constantly until browned and crispy, about 10 minutes. Turn off the heat and stir in the pistachio butter and tahini, allow to cool for 10 minutes in the pan while waiting on the chocolate molds to freeze.
Divide the pistachio filling mixture equally into the chocolate molds. Spread them out evenly to the top of the mold.
Pour the remaining half the melted chocolate over the pistachio filling and use a an off set spatula to evenly cover the pistachio mixture so it’s flat with the chocolate mold. Place in the freezer again for 20 minutes.
Remove from molds, cut into pieces and enjoy immediately. Keep stored in the fridge for best texture.

Notes
Storage: For best results, I recommend storing any leftover chocolate in the fridge. That way it stays crunchy with the best texture.

Chocolate Peanut Butter Mug Cake

INGREDIENTS
* 4 tablespoons all-purpose flour
* 2 tablespoons unsweetened cocoa powder
* 2 tablespoons granulated sugar
* 1/8 teaspoon baking powder
* 3 tablespoons milk (dairy or non-dairy)
* 2 tablespoons peanut butter (creamy or crunchy)
* 1/4 teaspoon vanilla extract

INSTRUCTIONS
1. In a microwave-safe mug, mix the flour, cocoa powder, sugar, and baking powder until well combined.
2. Add the milk, peanut butter, and vanilla extract to the dry ingredients; stir until smooth without lumps.
3. Microwave on high for 1 minute. Check doneness—if needed, continue microwaving in 10-second bursts until set.
4. Let cool for about 1 minute before enjoying directly from the mug.

🇳🇬 Nigerian Party Jollof Rice Recipe

Smoky • Spicy • Full of Flavor



🍚 Ingredients (Serves 6–8)

For the pepper blend:
• 5 large tomatoes (plum/roma)
• 4 red bell peppers (tatashe)
• 2–3 scotch bonnet peppers (atarodo)
• 2 medium onions
• 3 cloves garlic (optional)
• 1-inch ginger (optional)

Main ingredients:
• 4 cups long grain parboiled rice
• 1 cup vegetable oil or butter
• 1 large onion (sliced)
• 2 tablespoons tomato paste
• 2 teaspoons thyme
• 2 teaspoons curry powder
• 3 seasoning cubes (Maggi or Knorr)
• Salt to taste
• Bay leaves (2–3)
• 3–4 cups chicken or beef stock (or water)
• 1 cup chopped tomatoes (optional)
• Foil paper (for the smoky finish!)



🔥 Instructions

1️⃣ Blend the Pepper Mix
• Blend tomatoes, bell peppers, onions, scotch bonnet, garlic, and ginger until smooth.
• Pour into a pot and boil until reduced (thick, no water).

2️⃣ Prepare Rice
• Parboil the rice until it’s half-cooked (about 10 minutes).
• Rinse thoroughly with cold water and drain. Set aside.

3️⃣ Fry the Base Sauce
• Heat oil in a large pot.
• Add sliced onions, fry until golden.
• Stir in tomato paste and fry for 3–5 mins.
• Add boiled pepper mix, fry for 10–15 minutes until oil floats and the sauce deepens in color.

4️⃣ Season the Sauce
• Add thyme, curry, seasoning cubes, and salt. Stir well.
• Pour in chicken/beef stock and bring to a simmer.

5️⃣ Add Rice & Cook
• Add parboiled rice to the sauce. Mix until fully coated.
• Add bay leaves and a little water or more stock if needed. Rice should be just covered.
• Cover pot tightly with foil and lid (this traps steam — key for party Jollof).
• Cook on low heat for 20–30 minutes, stir halfway.

6️⃣ Smoky Finish
• Let rice cook until slightly burnt at the bottom — this gives that smoky “party flavor”!
• Stir gently and let sit for 5–10 minutes before serving.



📝 Optional Add-Ins:
• Add sliced onions and tomatoes on top before covering to steam
• Add cooked meat or fried plantain on the side
• Garnish with green peas or bell pepper strips
