Okro soup

Ingredients

2cups of Okro
Beef
Dry Fish
Cow Skin
Cow foot
4 cubes of Maggi
2 tablespoon of Salt
1 tablespoon of dry pepper
1 tablespoon of dry cryfish
4 cups of water
2 cooking spoons of palm oil

Method

Wash the beef, cow skin, cow foot and boil with 3 cups of water, 1 tablespoon of salt, dry pepper, 2 cubes of maggi and boil till all types of meat are soft.

Wash and chop the okro into small pieces.

Add the rest of the seasoning, dry fish, and water and let it boil for about 5-7 minutes.

Add the palm oil and let it simmer with the meat.

Reduce the heat to medium and add the okro, stir in once but don’t cover the pot and reduce to low heat as covering the pot breaks the resilience of the okro. Let it simmer for another 5 minutes on low heat. and food is ready.

This can be served as a stand alone meal for people on low-calorie diets and can be served with Eba (Garri or cassava flakes), Pounded yam, semovita etc.

Water leaf is a herbaceous annual and perennial plant that has green leaves that are edible. This vegetable is mostly found in West Africa and western North America. This vegetable is loved in most parts of Nigeria and is used in making different delicacies.

The botanical name of this vegetable is Talinum triangulare and is known as Gbure, Inene, Alenruwa, Nte oka. The leaves and stems of this plant are consumed as vegetables. In some parts of the country, it grows as a w**d and is usually more abundant in rainy season.

Water leaf like most vegetables has a short life cycle and is considered a perishable plant. It is used in the preparation of soups and stews. Sometimes, it could be eaten raw when it is added into salads. It could be sometimes added to okro soup to make it richer and greener

5 plum tomatoes

2 onions
A medium piece of ginger
1 cup (200g) tomato paste
½ cup vegetable oil for frying the tomatoes
2 Knorr cubes
1 habanero pepper (or to taste)
1 tablespoon thyme
2 teaspoons black pepper
Salt (to taste)
1 tablespoon curry powder (Nigerian curry powder)
5 bay leaves (optional)

Smoked chicken in pepper sauce

Ingredients:::
• 4 pieces Smoked chicken
• 1 red Onion
• 10 medium sized Chili pepper
• 2 medium sized Green Pepper
• 5 Garlic cloves
• 1 tsp. Curry powder
• 1 tsp. Thyme
• 2 crushed Seasoning cubes
• Salt to taste
Directions:::
Step 1: Rinse the smoked chicken with clean water and shred with your fingers or cut up with a knife. Smoked chicken is already cooked so it’s usually really easy for the meat to come off the bone. Don’t throw the bone away as you’d need it to make the stock extra juicy.
Step 2: Chop the onion, chili pepper, green pepper and mince the garlic cloves – set this aside
Step 3: In a small pot, heat up 1/2 cup of vegetable oil for about 1 minute. Once it’s hot, add the chopped onion stir fry for 30 secs, followed by the chopped chili pepper, green pepper and minced garlic. Stir fry for about 2 minutes.

Step 4: Add the shredded chicken, curry powder, thyme, crushed seasoning and salt to taste. Stir and leave for about 3-5 minutes. By now, the juice from the chicken would have seeped out.

Turn off the burner and serve alongside yam, rice, potato or any meal you want to serve it with.

Midweek lunch 😋😍

Okro Tomatoes pepper soup

Ingredients

8 pieces of Beef

5 Pieces of Snail

25 Fingers of Okro (Chopped)

2 Large Tomatoes

Half Red bell pepper

3 Yellow peppers

¼ bulb of Onion

1.5 tablespoons of blended pepper soup spices

½ cup of crayfish pieces

¼ cup of crayfish head

Seasoning Cubes

1 teaspoon of dry pepper



Method

Season your beef with seasoning cubes, onion and the teaspoon of dry pepper and bring to boil in a pot of water till the beef is semi soft. Add water as needed.

Wash your snails and add to the pot when the beef is halfway cooked so the snail could be soft as well but not too soft.

Add your grounded pepper soup spices to the pot and reduce the heat to medium heat.

Wash your crayfish pieces and crayfish head and separate both of them into two bowls.

Blend your tomatoes, pepper, and crayfish head with a quarter cup of water.

Pour the blended tomato, pepper and crayfish into the pot of meat and snails and stir in. At this point, add the crayfish pieces.

Add your chopped okro, stir for a minute and immediately take off the fire so the okro is not over cooked. There would be just enough heat in the pot to steam the okro.

Serve with swallow or as a stand-alone meal.

Chinese Sauce

You will need
400 – 500g of Frying Steaks – for my readers who buy meat in the market from butchers, you simply need slab of meat, sliced thinly.
2 – 3 Carrots
1 Green Pepper
2 eggs
Olive oil
1 piece of red chilli or ata rodo (scotch bonnets/habanero pepper)
1 green chilli
Spring onions
Ginger
1 medium size Onions
Dark Soy Sauce
2 – 3 tablespoons of Corn Flour
Water
Sweet Chilli Sauce
1 teaspoon Garlic Powder
1 teaspoon Curry Powder
1 teaspoon Dried Thyme
1 teaspoon Cayenne Pepper – dry pepper
2 Knorr chicken cubes
Salt
Coriander
1. Cut the meat into rectangular strips and set aside.
2. 2. Break two eggs in a bowl, and season with curry powder, thyme, garlic powder, seasoning cube, salt, dry pepper and whisk. When it has fully combined, add 1 tablespoon of corn flour and whisk. Kitchen Tip: you will face some resistance at first whisking in the corn flour, but this will disappear with more whisking. Add another tablespoon of corn flour and whisk
3. Pour this eggy mixture onto the meat and combine with your hands, making sure the meat is properly coated. You may wish to sprinkle in another tablespoon of corn flour, if the mixture is too watery. Leave this in the fridge for 30 minutes and proceed to chopping the vegetables.
4. Julienne the carrots. This is just a fancy word for cutting carrots into thin, long strips. Do the same for the green pepper, onion, chilies and ginger, only that you will have to slice the ginger much thinner. No one wants to bite into a chunk of ginger. Chop the spring onions in rings and set aside

Ingredients

Stock cube

Vegetable oil

Salt

Riped plantain

Method

Snails

Put the cleaned snails in a pot and pour water to cover them.

Add the stock cube, blended onions and cover to cook for 20 – 30 minutes.

In a frying pan, heat the vegetable oil till hot. Add onions and stir-fry for 1 – 3 minutes.

Add blended pepper cook for 3 minutes and add tomato puree.

After cooking for 5 minutes, add crushed seasoning and pinch of salt

Add the cooked snail. Stir- fry for 3-5 minutes.

Plantain

Peel ripe plantain and cut into desired sizes

Add water to plantain and sprinkle salt.

Heat a pan with vegetable and add plantain.

Deep fry till golden brown, 5-7 minutes;

Transfer fried plantains to paper towel to drain excess oil.

Peanut butter cookies
Ingredients

½ cup of honey
½ cup of peanut butter
⅓ cup of mashed banana
4 tbsp of butter or ¼ cup melted coconut oil
2 eggs
1 tsp of vanilla extract
½ tsp of baking soda
½ tsp of baking powder
½ tsp of ground cinnamon
1 ½ of cup rolled oats (grind for 30 seconds in food processor)
1 ½ of cups semi-sweet chocolate chips
Method

Preheat the oven to 325 degrees Fahrenheit, and lightly grease the baking sheets.
Pour the honey and peanut butter mixture into a mixing bowl.
Add the mashed banana and melted butter and whisk until the mixture is well blended. Use your whisk to beat in the egg, then add vanilla essence.
In another bowl, add oats, baking powder, baking soda, cinnamon and chocolate chips until they are evenly combined. Combine the dry and wet ingredients.
Then use an ice cream scoop to place even amounts of cookie dough onto the baking sheets.
Bake the cookies until they’re just beginning to turn golden around the edges, about 15 minutes.
Then remove the cookies from the oven and let them cool completely on the wire rack. If desired, sprinkle lightly with flaky sea salt.
