INGREDIENTS: (Makes about 36 cookies)

Step 1

Take Ground nut
Get Sugar

Roughly grind the groundnut,
Caramelized the sugar and add the roughly grinded groundnut
Pour into sack or a smooth tray
Or
Step 2
1 cup raw peanuts or roasted, shelled, and skinned peanuts
3 large egg whites
1 cup tightly packed brown sugar
ยฝ cup all-purpose flour
ยฝ tsp. kosher salt

DIRECTIONS:
1. Preheat the oven to 350ยฐF.
2. If using prepared peanuts, coarsely chop the peanuts, set aside ,
3. If using raw groundnuts, spread them on a large rimmed baking sheet and roast for 20 minutes, until the nuts are gently browned.

Transfer to a strainer to cool, and if the peanuts have skins, remove them.
3. Whisk the egg whites to soft peaks and fold in the brown sugar, flour, salt, and peanuts. With a teaspoon, drop the batter onto parchment-lined cookie sheets and bake until firm and gently browned, 20 minutes. Remove from the oven and with a thin metal spatula, transfer to a rack to cool. (Groundnut cakes will keep about 4 days in a sealed container at room temperature.

2 Eggs
4 Medium sized Bananans
1 cup of Banana Yoghurt Drink
2 tablespoons of Banana Flavour/Essence
150ml of Evaporated Milk

Procedure
- Cut 3 bananas or mash them for the main baking and slice one that will be dropped on top of the cake batter before it enters the oven. But you can also decide to mash or cut all and pour inside the batter and leave the cake top bare. However you want it, its fine.๐Ÿ˜€
-Sift flour and add baking powder and baking soda to it and set aside
- In a mixing bowl, pour in the vegetable oil,add the brown sugar and stir
- Add Eggs, the flavour, the Yoghurt drink and mix well
- Pour in the mashed or cut bananas into the mixture, then turn...afterwards add the flour and fold in .
- Finally add the Evaporated milk and mix well
- Then pour batter into prepared pan/pans and bake or before you bake, drop few round slices of bananas on top of the batter and bake...till its firm

RED VELVET CAKE RECIPE
Ingredients
2 ยผ cups cake flour (280 grams)
1 1/2cup sugar (300 grams)
1 teaspoons baking soda
1 teaspoon salt
260g butter,

2 eggs (100 grams)
1 tablespoon vanilla extract
2 tablespoons unsweetened natural cocoa powder
2 tablespoons red food coloring
1 tablespoon vinegar,
1 cup buttermilk

Instructions
Preheat the oven to 350ยฐF. Grease and flour two 9 inch round cake pans. For a taller cake you may use 8 inch round pans, but the bake time will need to be increased slightly because the cake will be deeper.
Thoroughly mix the flours, baking soda and salt together and set aside.
In a large mixing bowl, using a hand held electric mixer, beat the butter until creamy; and add sugar and beat for another minute, scraping sides of the bowl.
Add the eggs one at a time, beating on low speed for 30 seconds after each egg is added, then increase speed and beat on high for another minute. Beat in the vanilla.
Stir in the cocoa powder and red food coloring, then beat with the mixer until blended and smooth. Beat in the vinegar.
Using a heavy duty scraper, stir the flour and the buttermilk into the red mixture, alternating between the two (flour, milk, flour, milk, flour). Beat about 30 strokes with the scraper or until there are no lumps of flour and mixture is smooth and red. If batter is lumpy, beat with the electric mixer for no longer than 30 seconds -- don't overdo it or you'll build up the gluten too much.
Spread evenly in pans and bake for 25 minutes (30 minutes for the 8 inch pans) or until a toothpick inserted in center comes out clean. Cool in pans on wire rack 10 minutes. Invert onto a cooling rack and let cool completely.

9 STEPS ON HOW TO BAKE A CAKE (SIMPLIFIED)๐Ÿ˜Š๐Ÿ˜Š

RECIPES
250g butter /margarine(1satchet)
200g sugar(1 1/2 milk cup)
250g flour(3 milk cup- you can reduce it)
5 eggs
1 TBSP vanilla flavor
1/2TBSP baking powder
Nutmeg 1TSP(optional)
Procedure
Step 1:
Measure out all your ingredients.
Sieve the flour, baking powder and nutmeg into a bowl and set aside.
STEP2
Crack the eggs and whisk vvvvery well in another bowl
STEP 3
Prepare your pans by greasing with butter and flour( you can use a stainless plate)
STEP 4:
Mix the butter and sugar with a spatula (turning stick) for about 30-45mins till it becomes fluffy and lighter in color.
Add your flavour to it and mix
STEP 5
Go and preheat your oven
STEP 6
Add a little portion of your whisked egg into it and mix.
STEP 7
Add a little portion of your flour into and mix (PLEASE DON'T MIX HARD JUST FOLD IN)
STEP8
Repeat step 6 & 7 three times.
Which means you add your beaten eggs and the flour in three parts alternating the eggs and flour starting with the eggs and ending with the flour. (Which means you add a third of the eggs, mix then you add a third of the flour mix again until the flour is just incorporated. Continue in this pattern till you have mixed in all the beaten eggs and flour)
STEP 9
Pour into prepared pans and bake in the middle rack of your oven for about 45 - 50 minutes or until you insert a toothpick and it comes out clean.

When this yummy creation is ready, bring it out of the oven, allow to cool in the pan for about 5 mins then place on a cooling rack to cool completely.๐Ÿฅฐ๐Ÿฅฐ

Ingredients
(Fish roll dough)
1/3 teaspoon baking powder
1/4 teaspoon yeast
3 tablespoons sugar
3 tablespoons butter
Warm water
Pinch of salt
3 cups flour

(Fish roll filling)
1 fresh fish (titus)
2 medium size onion
1 teaspoon curry powder
Fresh chili pepper to taste
1/4 teaspoon garlic powder
Vegetable oil for frying
Salt to taste
2 teaspoon Chili powder
1 k**r cube

Procedure

1. Pour yeast and sugar in warm water and set aside. The yeast here help to give it an inner fluffy texture without drying out.

2. Combine flour, baking powder, butter and salt in to a bowl; add yeast mixture to the flour mixture to form pliable dough. Cover bowl to stand for 30minutes

3. Place rinse fish in an empty pot. Add pureed onion, salt to taste, curry powder, garlic powder and chili powder. Add little water and leave to cook for 10 minutes.

3. Remove the fish from stock and remove bones. Crush and mash up to the fish and set aside.

4. Heat up 4 tablespoon of vegetable oil in a pot and add the crushed fish. Add blended pepper, onion, seasoning cube and stir fry the content for 5minutes on low heat and set aside

5. Divide dough into sizeable pieces of ball, take one ball of dough and roll out with a rolling pin. Add the fish filling and roll up. Seal the rolls with finger tip dipped in water/flour mixture, and rub the rolls at the edges. Fry until golden brown.

6. Remove from the oil and drain on a paper towel placed in a sieve

Flour 250g/ 3 milk cups
Yeast 1/2tbsp
Sugar-4tbsp
Butter 25g
Nutmeg 1 small seed
Milk flavour 2 tbsp
Water 1cup
Oil to fry.

Methods
Step1: pour your flour into a bowl, add all the dry ingredients and mix thoroughly, let butter be the last and mix thoroughly.

Step 2: add your water gradually as you mix (make sure the water is not too much Don't be deceived by the texture). After you have mixed and there's no dry flour showing

Step3: put your batter(already mixed flour) on a surface and start kneading in fact beat it very well๐Ÿ˜€ till it becomes tender, you can do this for 20min depending on your strength.

Step 4: put it in the bowl and cover with a cloth and place in a warm place for 1hr depending on your room temperature. Be sure it really doubled in size if not cover it again and leave for another 30min.

Step 5: punch down the air and don't beat this time around, make sure there's no air in it again, then cut into ten pieces or more

Step6: use your palm to get a smooth round shape

Step7: dust your tray with flour and place the rounded smooth shaped batter on it one after the other. Get a cover of bottle water to create a hole in the middle if you don't have a doughnut cutter

Step8: cover with a clean cloth and leave for 30min.

Then fry in a deep hot oil.

INGREDIENTS.
* 1 kg of cornflour powder
*2 sachets of milk powder flavour
*1 teaspoon of egg yellow powder( you could add more for a deeper colour, or less for a lighter colour)
*1 tablespoon of banana flavour powder ( you may use any flavour of your choice)
*10 tablets of vitamin C for added vitamins( it's optional)
N.B, all ingredients must be in powder form.
METHOD
* get a big bowl, sieve in your cornflour, to remove any particles.
* sieve into it your sachet milk powder flavour
* mix together to combine.
* sieve in your egg yellow powder
* mix together
*grind or crush your Vit C to powder form, and sieve into the bowl, mix together.
* Add the banana flavour, or any flavour of your choice.
*Mix all together till its very well combined.
Your custard is ready, pour into an airtight container and use as desired.

HOW TO BAKE CAKE WITHOUT OVEN

Ingredients
2 cups of all purpose flour
5 drops of vanilla essence
1 teaspoon of baking powder
1/2 cup of water
2 tablespoons of powdered sugar
1 cup of condensed milk
4 tablespoons of melted butter

Method
1. Take a large pressure cooker and remove its rubber ring and whistle. Put sea salt at the bottom of the cooker and spread it evenly. Place it uncovered over a low flame.

2. Next, grease a baking pan with butter and keep it aside. In a large mixing bowl, add all-purpose flour, condensed milk, sugar, water and melted butter. Whisk them nicely.

3. Now, add vanilla essence and baking powder in the cake batter and mix again. When the batter is smooth and has no lumps in it, pour it in the baking pan and shake it gently.

4. Now, place the pan carefully over the sea salt inside the pressure cooker and put on the lid. Keep the flame at a low setting and bake for 40 minutes.

5. After 40 minutes, check if the cake has baked completely by putting a skewer in the cake if it comes out dry, the cake has baked else, you can bake it for few more minutes.

6. Wear gloves and take it out carefully. Turn it upside down on a plate and tap the bottom, your cake will come out of the baking pan. Serve warm or cold, thatโ€™s your choice!

Tips
1. Use good quality aluminium pressure cooker which has at least 5 litres of capacity.
2. Donโ€™t set the flame on the highest level as it will burn the bottom of your cake, which is just not nice!
3. You can use both salted and unsalted butter in the recipe.
4. Donโ€™t whisk the cake batter too much. Once it reaches a thick and smooth consistency, stop there!
5. If you want to make a chocolate cake, just add the chocolate powder into the batter. Similarly, you can add any flavour of your choice in the batter.
6. Add dry fruits in the batter to enhance the taste of the cake.

1) Put your bananas in your blender, add sugar and blend to smooth paste.

Filling only

Procedure
1. In a bowl Add your yeast to warm milk , stir not too much , cover and set aside for 5 mins

2. In another bowl sieve your flour, add sugar and salt and set aside
3. Add your butter or margarine to the warm milk mixture.
4. Whisk your egg
5. Create a hole in the dry ingredients

8. Cover your dough for 10 mins
9. Roll the dough flat and spread it with your cinnamon +sugar powder

When you joined my page, I promise to share anything valuable that goes around the Cake Making Business.

Here is a short story I am telling you about my mentor today. Read on!

You might not know my mentor but let me give you a brief introduction of who she is. Her name is Kwaghdoo Enyi, I call her Kay and others too do so for a short. She is an avid baker and an entrepreneur. She lives and work in Abuja, Capital Of Nigeria. She is a wife and a mum of 3.

She grew her cake business Kay's Pastries to 7 figures per month outfit with over 10 full time staffs, but many may not know it started at about 30 years ago.

While growing up, her mum ( Most Blessed Memory) was a thorough bred educationist. In the 1980s to the early 90s who was the principal of one of the biggest Catholic Secondary Schools, Queens of the Rosary Secondary School Gboki, Benue State, Nigeria.

This was at a period where there were foreign missionaries, Reverend Fathers, Indians and Ghanians in many Nigerian Schools.

She studied at one of the unity schools and on one faithful holiday while in her JSS class, She went with her Mom to visit some Irish sisters and they were offered cup cakes.

She had never tasted cake so yummy, soft and fluffy. It was simply amazing and She left there with thinking of how to bake such yummy cakes.

She could not stop thinking and talking about baking until her mom got her Home Economics teacher to tutor her. Her experience with Mrs. Ogah was her first close contact with baking, She will always get involved and play small roles like breaking eggs, measuring sugar and beating batter.

She says, "She still remember with nostalgia all the cakes She was trying her hands on back then. (is now convinced that her early contact with cakes is where She picked a sweet tooth fromโ€ฆLol"

She began to bake at home what She was learning from Mrs Ogah, some times She would bake for family, friends and get paid but nothing serious as per running a proper cake business. The cakes She was baking at this time were all un-iced cakes.

Secondary school over and She was living in Makurdi at the time waiting for her admission and next step forward. Then came her 18th birthday and She was feeling like some Disney princess. She had such long hair back then..Lol

Her big sis who knew She was a cake addict surprised her with a beautifully decorated cake all the way from Abuja. Her excitement was heightened and her mood elated but alas, on cutting the cake after singing a sweet birthday song, it was horrible on the inside, tasteless, poorly done and going bad.

It was such an anticlimax, in her disappointment, She resolved to ensure no one goes through such embarrassment on their special day and her idea for Kayโ€™s Pastries was born.

While in the university studying Economics, her dad bought her an oven and She started baking birthday cakes regularly for students. She was making some cool money from baking and She wasnโ€™t thinking of a job after She graduated, got married and moved to Abuja around 2004.

She was baking from home with no staff back then, She lived in the center of the city and it was easy for most of her customers to come pick up their cakes.

It was during this time She formally registered Kayโ€™s Pastries with CAC, She was operating from home until some envious neighbors reported her to AMAC officials as a business operating in a residence.

AMAC is a local council in Abuja with task force members who enforce such, itโ€™s either you bribe them which you will continue to do OR you quit.

She had to quit home and moved to a commercial complex to set up her first cake shop and employ staff officially. She moved her business from her residence to a shop within 48 hours under a very tensed condition.

Now She is glad because her business is set up with one mission, at Kayโ€™s Pastries they donโ€™t sell โ€œoff the shelfโ€ cakes.



Her cakes are only baked in order to ensure each customer gets not only a personalized designed cake but also experience the delight of being treated to a freshly baked cake with every single purchase.

Baking cakes and creating beautiful memories for her clients on their special occasion have become a huge part of her life.

How to make your cake flower at home with the all purpose flour.

Step 1: Measure 1 cup all-purpose flour. Remove 2 Tablespoons.

Step 2: Measure 2 Tablespoons cornstarch. Add to the flour. Cornstarch contains less gluten than flour, so itโ€™s a wonderful tenderizing ingredient to help make cake flour.

Step 3: Sift together thrice. Basically, sift into a mixing bowl once. Then run it through the sifter two more time.
Sifting not only mixes the two ingredients together appropriately, it aerates the mixture so the consistency is similar to real cake flour.
