HOW TO COOK VEGETABLE SAUCE (Step-by-Step Guide with Pictures)
Ingredients:
• Mackerel fish
• Tomatoes
• Red bell peppers (Tatashe)
• Cayenne peppers (Bawa)
• Scotch bonnet peppers (Atarodo)
• Onions
• Garlic
• Cow skin (Ponmo)
• Smoked Panla
• Dried prawns
• Crayfish powder
• Seasonings
• Salt
• Vegetable of your choice
• Cooking oil
1. Start by seasoning your mackerel fish with chili peppers, onion powder, seasoning, and salt. Allow it to marinate for a while, then fry it in an air fryer until golden brown and Set aside.
2. Heat some cooking oil in a clean pot. Add chopped onions and minced garlic, and fry until they release their flavours.
3. Introduce the chopped tomatoes and blended pepper mixture into the pot. Stir thoroughly to combine.
4. Season the mixture with seasoning powder and salt. Then, add your ponmo, smoked panla, dried prawns, and crayfish powder. Mix well to combine all the ingredients.
5. Cover the pot and allow the sauce to cook on medium heat.
6. Once the sauce is well cooked, add your washed vegetables. Stir thoroughly to combine the vegetables with the sauce.
7. Gently place the fried mackerel fish into the pot. Allow the sauce and fish to simmer together for a few minutes.
8. Your vegetable sauce is now ready! Serve with rice, yam, or spaghetti, and enjoy!
