Eating with your hands can make you even more aware of all the textures, tastes and aromas of the food you are eating, which can increase your satisfaction

During retreats I love to treat my guests with platters like these. Especially after a deep inner dive. Because after a cacao ceremony, breathwork session or soundhealing, platters like this are a real feast for the senses 🙌

L A M A M A G A I A 🌿

What a beautiful year it was!
In 2021 the seeds of La Mama Gaia were planted at the beautiful . Where I discovered my passion to treat people with healthy, nourishing and tasty food.

Last year it was time to blossom 🌸

I have been invited to cook at many beautiful retreats around the country and off course at our own retreat center in Portugal.

I am super exited to dive into the new year!

A lot of amazing new connections have been made and some beautiful retreats are allready planned for coming year 🙏
I am curious what's more to come!

💜 C H O C O H E A V E N 💜

This chocomousse is plantbased and made with aquafaba!

Aquawhata?

Aquafaba is the liquid that results after soaking dried chickpeas in water. Or the liquid in your chickpea can that you probably usually drain down the sink!

Aquafaba is the perfect plantbased alternative for egg white in your choco mousse 🌿

So next time don't drain it down the sink and follow my recipe for a heavenly dessert 💜

For 4 portions

INGREDIENTS
🌿 100g melted dark chocolate
🌿 120g aquafaba
🌿 85g coconut sugar (more or less to taste)
🌿 Pinch of vanilla
🌿 Pinch of salt

For the whipped Coconut cream
🌿 1 can of refrigerate coconut milk (400g)
🌿 50g coconut sugar (more or less to taste)
🌿 Pinch of vanilla

METHOD
Whip the aquafaba with a stand mixer for about 10 minutes until smooth and firm.
Add the sugar, vanilla and salt and whip a little more until you have a nice mousse-like texture.

In the meantime melt the chocolate au Bain Marie.
Let it cool down a little bit and whisk gently trough the aquafaba.
Stick your finger into the mousse, lick and taste 😋

Divide into 4 portions in a glass or bowl and let it set in the fridge for about 30 minutes.

Open the refrigerate can of coconutmilk and transfer only the thick part to a bowl. Discard the watery part, or save for another recipe and whip the cream until smooth, using a stand mixer. Add the vanilla and sugar to taste and whip until smooth and firm.

Top your choco mousse with the whipped coco cream and add some crumbled cookies, nuts or grated coconut to top it off 💜

💜 S N I C K E R S 💜

The all time favourite!
And I am sharing the recipe below for all of you who couldn't resist this chocolate-peanut heaven 🤤

For 6 bars:

BASE
150g almond or oat flower
50g grated coconut
1 tbsp agave (or more to taste)
1 tbsp coconut oil
2 tbsp peanut butter
Pinch of salt

PEANUT CARAMEL
150g soaked dates
60g coconut cream
75g peanut butter
1 tbsp tahini
1 tbsp agave (or more to taste)
Pinch of salt

TOPPING
200g melted dark chocolate

Mix all the ingredients of the base into a food processor until smooth and sticky. Even out on parchment paper until you have a nice layer of +/- 1 cm, big enough to make 6 bars.

Now mix all the ingredients for the caramel in the foodprocessor until smooth. Even out on top of the BASE layer and let it cool down in the fridge for a little bit so it will be easier to slice it into nice bars.

In the meantime, melt the chocolate au Bain Marie.

Slice the bars and cover them with the melted chocolate.

- Before you cover them in chocolate you can add some extra peanuts to the caramel layer for some extra crunch -

Let it cool in the fridge again until you can't resist it anymore to take that heavenly bite 🤤
