Beans & more. Because they are an underrated ingredient and healthy too. But you have to make them feel special and always add something of a sauce. This time with some yolk crème with homemade mushroom garum creating depth of umami flavour.
In chicken stock cooked Borlotti beans then stirfried with butter and fresh herbs • all on top of roasted buffalo bone marrow • sprinkled with some dukkah and a fresh grating of long pepper • some egg yolk sauce with mushroom garum • purple shamrock.
