Kennia Mindful Cooking
Food to me is passion, connection, pleasure, comfort, love, and healing. Growing into adolescent it has always played an important role in my life. Sometimes we ate the most basic food because there almost wasn’t enough money to buy even a loaf of bread. But whatever we ate, my mom always made sure it was tasty, except for those times she insisted on putting capsicum and olives through the sauce that accompanied the rice. Just the look of it made me want to run to the toilet! Luckily I have grown over my dislike of these two ingredients and actually love all kind of vegetables and fruits. I have my mom to thank for that because we always got to eat real homemade food.
Working for many years in hospitality during my young adulthood, my love and passion for food grew, however, it wasn’t until my early twenties that I started gaining a better understanding of my own health. By that time I had been in and out of the doctor’s office more times than I could count on one hand and that for the exact same condition each time. And every time I would get the same antibiotic prescription or a variation on it. My diagnoses was Candidiasis which is an infection caused by a yeast called Candida**.
As prescribed by my doctor I took the antibiotics every time and it did go away but left me feeling a lot weaker than before. And not long after it would be back, each time faster than the time before, until the antibiotics seemed to have only made me feel weak yet leave the Candida unharmed. That is when I realised I couldn’t keep going on the same way. A change had to be made; I decided to research Candidiasis and discovered there was so much more to my condition, and so many things in my health started to make sense. From there on I changed my diet and lifestyle by cutting out sugars, yeast products, dairy, and alcohol for the larger part. I started eating healthier and exercising more each day. This is how I have managed to control the Candida yeast instead of it controlling me.
You can really give your body everything it needs just by eating a balanced (mostly) plant-based diet. But not all plant-based foods are necessarily healthy and nutritious. As with animal-based food, plant-based food can be prepared in many different ways. With my food, I want to show you a healthy and mindful way of cooking vegan food that is satisfying and yet delicious. Preparing a nutritiously balanced meal that is equally as tasty is very important to me as I absolutely love food. I want to enjoy every bite as I believe food is one of our greatest pleasures in life. And when we eat food with joy, the healing properties are magnified. Our mind and body are interconnected, so how we feel, greatly effects how our body reacts and functions.
