Starting your day with a wholesome breakfast rich in protein and good fats, like eggs and greens, sets you up for success, making it more likely you’ll stay on track with healthy choices throughout the day. But on the days you’re craving something different, it’s great to have a delicious alternative ready to go!
Coconut Almond and Mango Granola 🥭🥥
2 cups rolled oats
1 cup each; coconut chips or thread, cashews nut pieces, flaked almonds, sunflower seeds
½ cup each; pumpkin and sesame seeds
4 tbsp light-medium olive oil
6 tbsp pure maple syrup
3 heaped tbsp almond butter
2 tsp vanilla bean extract
2 tbsp coconut flour*
A good pinch of sea salt
⅓ cup each; dried mango slices and dried apricot
PREHEAT oven to 165deg fan bake.
MIX oats, nuts, seeds and coconut in a large mixing bowl.
ADD remaining ingredients to a small pot over medium heat, whisk together until well combined and warm.
POUR over dry ingredients and mix with a wooden spoon or your hands until well combined.
LINE a large baking tray with parchment paper, and spread half of the granola on the tray evenly. Bake for 10 minutes before mixing the granola and baking for 5 minutes. Transfer the granola to a large heatproof bowl and repeat with the remaining raw granola.
DICE the dried mango and apricot and toss through the granola.
ONCE the granola is cool, transfer it to an airtight container. Keeps up to 4 weeks
SERVE with your choice of fresh or stewed fruit, milk and yoghurt.
* You can blitz coconut to make coconut flour if you don’t have any.

I love this simple and easy dish from my Everything Salads Spring Summer cookbook and I know you'll love it too! Just roast the beetroot and whip the rest up in minutes! 🤩
BEETROOT, ASPARAGUS + GOAT'S FETA SALAD
Serves 4, GF, DF
(The beetroot can be pre-prepared up to 3 days ahead of time. So mixing this salad on the day can be super fast)
SALAD 🥗
3 large beetroots (700g), washed, peeled, and cut into 4cm chunks
4 Tbsp olive oil
¼ cup balsamic vinegar
3 tbsp honey or brown sugar
1 tsp sea salt
1 bunch of asparagus, cut in half or 300g of green beans
2-3 handfuls of salad greens
1 large handful of toasted pecans or walnuts + extra for garnish
75g goat feta
1 handful of parsley, roughly chopped or micro herbs
¼-⅓ cup of Maple ACV dressing
MAPLE ACV DRESSING 🍁
⅓ cup apple cider vinegar
⅔ cup light olive oil
2 tbsp pure maple syrup
1 tbsp grainy mustard
Good pinch of salt
PREHEAT the oven to 180deg Celsius.
TOSS together the beetroot, olive oil, balsamic vinegar, honey/brown sugar, and salt in a roasting dish. Cover with aluminium foil and bake for 40 minutes. Remove the roasting dish from the oven, remove the aluminium foil, toss the beetroot, and cook for a further 20 minutes uncovered. Set the beetroot aside to cool.
HEAT a large frying pan with 2 tbsp olive oil. Rinse asparagus or green beans and add them to the pan wet (be careful of oil spitting back at you). The wet greens will help them cook faster. Toss the greens every minute for 4 minutes, season with salt, and remove them from the pan to cool in a large bowl.
COMBINE all maple ACV dressing ingredients in a sealed glass jar by shaking.
COMBINE all ingredients in the large bowl with asparagus, and gently toss them with your hands.
TASTE your salad and add extra salt and pepper if needed.
SERVE salad on a large serving plate or shallow bowl.
GARNISH with extra pecans.

It's amazing to hear how my recipes have become your go-tos, or that you eagerly anticipate my content each day, it gives me such a boost to know that what I'm most passionate about sharing is resonating for so many of you!

You won't believe how delicious this chocolate-studded banana loaf is - it never lasts long at our house! 😋
It's quite low in sugar compared to most banana loaves - the key is to get the sweetness from extra ripe bananas and adding a little maple syrup!
Banana + Chocolate Loaf 🍌
(gluten free)
INGREDIENTS
3 ½ large ripe bananas
2 large eggs
⅓ pure maple syrup
75g butter, melted
1 tsp vanilla bean paste
1 cup almond meal
½ cup white rice flour
1 tsp baking soda
Pinch of sea salt
110g dark chocolate
METHOD
- Preheat the oven to 170 degrees fan bake. Line a loaf tin with parchment paper.
- Mash three bananas in a large mixing bowl, add eggs, maple syrup, melted butter and vanilla and whisk to combine.
- Add almond meal, rice flour and baking soda and mix to just combine using the whisk.
- Roughly chop dark chocolate and add two thirds to the banana mixture. -
- Pour batter into pre prepared loaf tin.
- Slice half a banana in half lengthways and place on the top of the loaf and scatter remaining chocolate on top.
- Bake in the oven for 1 hour or until a skewer comes out clean.
- Allow to cool in the tin for 20 minutes before transferring to a wire rack to cool.
- Enjoy warm or store in an airtight container in the fridge for up to 4 days.
** Dairy free alternative: replace butter with melted coconut oil.
Save this one for afternoon teas, lunchboxes or for next time you've got some bananas to use up! 🍌
