Meet our Guest Chef Matteo Simonato who will bring his Milanese and Venetian Italian Flair to our second Global Collaboration 2025. Together with Chef 'Ana Ma'ilei & Chef Adriano Savio they will Curate a 5 Course Top end Pacific and Italian Dining Experience, includes All Dietaries. May, 2025.

"I am very curious about Pacific Cuisine and am always wanting to learn new Cuisines." Born in Milan on May 15, 1986, with Lombard and Venetian roots, developed a deep passion for cooking from an early age, watching and helping his maternal grandmother prepare family feasts for the holidays.
After gaining various experiences in Italy, at just 19 years old, he decided to move to Australia, where he encountered new culinary techniques and unusual ingredients that enriched his creativity and allowed him to explore innovative pairings. His journey of culinary exploration continued in China, Thailand, and Morocco, where he further deepened his knowledge of local cuisines.
After numerous travels, Matteo returned to Milan, where he joined the *Alchimista* restaurant and contributed to the opening of *Spice*, an ambitious project blending diverse flavors and cultures. Later, he became the personal chef of a Saudi prince, an experience that strengthened his ability to work in exclusive and high-end culinary environments.
Today, he leads the *Bio Agriturismo "Ciasa do Pare"* in Soraga di Fassa (TN), where he champions sustainable, genuine cuisine inspired by local flavors, with a strong connection to nature and the surrounding territory. His culinary philosophy combines a love for tradition with a relentless pursuit of innovation, creating dishes that tell stories of travel, culture, and passion.
