Like many folk, we have been a little at a loss as to what to do to help all of those who have been impacted by the cyclone and it's catastrophic damage. Al Brown has come up with the perfect solution - by having us do what we do best - cooking up a storm. This event is happening nationwide and simultaneously - the biggest dinner party in our history.

Join us this Monday, 20th of March, at our venue The Vines Club where we will be serving a meal of comfort food in honour of those homes and livelihoods have been destroyed and in doing so we can help to rebuild them.

Such a wonderful occasion to cater today…a Very Significant Birthday for a wonderful woman! Mary has been an advocate for Verve since we first catered for an organisation she is very involved with, Guides of the Botanic Gardens, back in 2013! Such a pleasure to prepare food for her and her family. Check out the chocolate cheesecake…cake decorating isn’t something we do a lot of as we usually leave that to the experts. Today I was cooking one of my favourite dishes….so delicious, easy and colourful! I call it Chicken Italiano…balsamic, red onion, garlic, olives and capers. Great at a buffet or as part of a shared platter menu.

Here’s the recipe as promised…..I’ve been busy cooking all day, so sorry this is so late! You’ll notice I always specify free-range eggs. From day one Verve has been conscious of operating in an ethical way. We love chooks and believe happy chooks make delicious eggs. Below is a wee video of my chooks (and ducks!) at home, they certainly don’t supply the enough eggs for Verve…they are frequently off the cluck!

Flourless Orange & Almond Syrup Cake
4 oranges - seedless if possible
6 free-range eggs
430g (2 cup) caster sugar
600g (6 cups) almond meal
2 tsp gluten-free baking powder

Orange Syrup
2 oranges
310g (1.5 cup) caster sugar

Method
Step 1
Preheat oven to 170°C. Grease a round 22cm springform pan with melted butter or oil. Line the base with non-stick baking paper.
Step 2
Place the oranges in a pot and cover with cold water. Bring to the boil over medium heat. Cook for 15 minutes or until tender. Drain. Return to pot and cover with cold water. Bring to the boil and cook for 15 minutes (this will reduce the bitterness of the peel). Refresh under cold water. Drain. Quarter the oranges, remove and discard any seeds.
Step 3
Place the orange in the bowl of a food processor and process until smooth.
Step 4
Use an electric be**er to whisk the eggs and sugar in a bowl until thick and pale. Add the orange, almond meal and baking powder and gently fold until just combined. Pour into prepared pan.
Step 5
Bake fo r 1 hour or until a skewer inserted into the centre comes out clean. Set aside for 15 minutes to cool.
Step 6
Meanwhile, to make the orange syrup, use a zester to remove the rind from the orange. Juice the orange. Put in a pot and over a low heat, cook, stirring, for 2-3 minutes or until the sugar dissolves and the syrup thickens.
Step 8
Turn cake onto a serving plate. Use a skewer to gently prick the top. Spoon over syrup. Cut into wedges to serve….enjoy!!

This is one of three roasting-dish-sized cakes that my recipe made…using 18 beautiful freerange eggs, 12 oranges and 18 cups of almond meal….yeehaaa! This cake keeps its fabulous colour….and I love to serve it as a dessert with drunken apricots and a mix of whipped cream and marscapone. It’s fab warm or cold. I’ll post the recipe tomorrow….
