Anything food, get in touch. My name is Alesha Bilbrough-Collins and I am a chef who has been working in the industry for over 20yrs, with stints at Ottolenghi and Maze restaurants in the UK. BearLion Foods aims to showcase quality local, organic and seasonal produce and ingredients. Focusing on sustainable food choices including go

od fats, natural sweetness and minimal processing. Supporting New Zealand’s farmers, growers and artisans who’s ideals represent and reflect a resilient living ecosystem and community. We have just moved to Upper Moutere and have set-up a farm shop at our property in Supplejack Valley, where you can order takeaway for Friday each week. Our weekly menu consists of two different salads, a main, a dessert and our range of preserves and products. We are also available for catering, cooking classes, private chef hire, products, hampers, art and more!

HAPPIEST WINTER SOLSTICE Sharing some love from the old boy Ian’s fish recipe As featured in the BearLion cookbook “Food for Thought” page 184 If you’re not catching your fish then do you know who is or how? #GIVEASH*TABOUTYOURENVIROMENT Celebrate nature with care and respect! IAN’s FISH 1/4 c flour 1 large fillet per person 2 tbsp olive oil Knob of butter ( Ian says HEAPS, but not a sh*tloads) 2 eggs, beaten Salt Lemon juice Ian’s my Dad and he’s a good bastard. He’s no good at omelettes but he’s f**ken awesome with fish, I do feel this would be up there for my last meal, breakfast that is. Coming straight in from a morning fish with dad in the dinghy not far from shore. Freshly caught and cooked with mums bread that has to be toasted and left to go cold, spread with inch thick butter. All around the dining table with endless cups of tea and time…… METHOD Place the flour in a container with a lid or reuse a bag, add fillets and shake about until dusted evenly. Heat oil and butter in pan, dust off any excess flour from fillets into beaten egg and place in the hot pan for a few minutes until golden brown. Flip and cook on other side. Dish up on your plate with a crank of salt & squeeze of lemon, don’t forget the toast and tea. Grateful!
