Autumn Wellness check-in! It's that time of year we all need to be thinking about our wellness leading into the colder months.

Chicken Soup for the soul

If you really want an authentic, good for you soup, start with a legitimate chicken bone broth full of vegetables and herbs packed with collagen. Use all different parts of the chicken or even better, a whole chicken. Start by seasoning the whole chicken with salt and pepper of your choice, I prefer ground white.

If you are on a tight schedule this step can be omitted from the recipe. Instead, use a really good chicken stock (I only use Massels) for your broth and use cooked shredded chicken.

Submerge the chicken in a large pot with water. Add in vegetables such as white onions, red onions, leek, spring onions, shallots, celery, mushrooms, carrots, a bay leaf, garlic, fresh herb bouquet garni - chives, thyme, sage, parsley... Cook over a low heat and simmer for at least 4 hours. Stay away from starchy vegetables, these can be added to the broth later in the cooking process. As it simmers, use a sieve to remove any gunk – whitish, greyish, or brownish foamy fat or floatie's.

After the long cook of the broth, drain the broth away from the vegetables and herbs into a container. Refrigerate the broth until the collagen layer has set. This is a gel-like texture. On top of that there will be a fat layer that has set. Carefully remove this layer and discard it. Keep the chicken meat for later and discard the bones and cooked vegetables - pooches love them!

Back in the pot sauté diced onions, carrot, celery until they start to soften. Add your stock back to the pot (and any potatoes, pasta or noodles) and cook until the vegetables are soft. Add in the chicken you reserved from the broth cook, or cooked chicken if you chose to use chicken stock. At this point, you can add in fresh leafy greens, peas, pak choy or spring onions and simmer until cooked through. Adjust the flavour with chicken stock and seasoning.

Top with fresh herbs and serve!
