📣 Personal post alert! There's nothing that we love better than a great night combined with a good cause. (Here's a quick 📸 from our last night out) Rebecca belongs to the which is hosting a Speed Networking Event to Fundraise for our local 🔥

The Networkers is all about giving you a 📣 voice in the community 📣 and there's no organization we think aligns more than the good old Citizen's Advice Bureau. But did you know they are only 3 years old and independently funded? 🤔 And the real kicker is that most of that funding is allocated down to the last dollar leaving no room for unplanned tech breakdowns, rise in costs, or simply thanking volunteers for their incredible service.

💃 We'd love to see you at this fun, fast-paced and low pressure networking environment. Rebecca will be calling the shots (in her element!) directing you throughout the night, and Jema will be on the floor speednetworking away!

The esteemed ladies of Hemsworth Estate invite you to celebrate the Engagement of Miss Diana Guinness and Captain Doug Wallace on Saturday 17th August of the year 1924 in an intimate soiree.

But watch out! Not all is well in the Guinness Family. 🕵️‍♀️ Discover secrets, lies and a lavish party to die for in the 1911 Homestead only 10 minutes from Ashburton, and 1 hour from Christchurch.

🔍 This 1920s themed Murder Mystery is not your usual suspects, the've thrown out the scripts in favour of each guest receiving unique clues to be revealed throughout the night. Complete with roving trays of canapés, a welcome cocktail or mocktail upon arrival, and self service of tea, coffee and lemonade to keep your wits sharp, this is an evening to remember...

Winter in the garden at Hemsworth Estate is not bare earth and grey weather. We have stunning Mid-Canterbury crisp sunny days, and winter perennials showing us that not all cold days are bleak and there's even a few errant rebels blooming in their own time (like this rhododendron)

This weekend we had the pleasure of attending the Matariki Ball fundraising for their study. Hemsworth Estate donated a Country Escape experience along with which we're pleased to say attracted a bit of a bidding war between friends! It was a beautiful evening and we're grateful to all those involved and who donated to a well worthwhile cause. Big thanks to Will and Jen who invited us 🥂

The real MPV of our high tea today was the homemade Strawberry Jam 🍓 thank you for all your wonderful comments about our jam (and the rest of your high tea). We love hearing your feedback and we're especially glad when these extra touches make the difference.

Our next ticketed high tea is September 1st on Father's Day. And we're available year round for private bookings. DM to enquire.

What to do with leftover Champagne? 🍾

Leftover champagne is a foreign concept to most 👀 however on the off chance you do have a bottle go flat, here’s a new experiment from the Hemsworth kitchen we’re looking forward to debuting at our Winter High Tea with lemonade scones and freshly whipped cream ☕

🥂 Champagne Infused Strawberry Jam

Ingredients:

1.3kg Strawberries
Half a bottle of champagne
600g sugar
1 jar homemade pectin
5g butter

We soaked the strawberries in the leftover champagne for 4+ hours, and then drained of excess liquid. Then start the usual maceration process of mixing the sugar with the berries until dissolved (approximately 6 hours or you can leave overnight in the fridge).

Strain in a colander over your jam pan and bring the sugar syrup to a boil, skimming the foam off the top. Add your strawberries and bring back to a boil that will not stir down until the syrup runs clear and the fruit suspends in the syrup instead of floating. 

Do a wrinkle set test, and if it’s not yet set to your liking, add pectin and continue to bring to a boil for 5 minutes. You can also add 1/4 cup of champagne in the mix at this point.

Do another set test. 

If it’s still not set, continue to boil for 5 minutes, turn off the heat for 1 minute, and do a set test waiting 1 minute until the syrup is the consistency you prefer. 

Once set, stir in the butter.

Ladle into hot jars and screw clean lids on finger tight.

Water bath for 15 minutes. 

Serve with fresh scones and whipped cream.

We love a couple that marches to the beat of their own drum! Rebecca had the chance to arrange a destination elopement for dear friends in her previous work. Hear how the experience of eloping overseas went for them and how Rebecca's expertise made their dream come true 🥂

"Rebecca's extraordinary efforts made our dream of eloping to a foreign country with our twin babies a reality. It was no small feat, but her heroic dedication ensured that everything went smoothly and flawlessly.

The setting, an African safari rooftop, was simply idyllic, but it also posed challenges due to its remote location. However, Rebecca handled everything with finesse and made sure that every detail was taken care of on-site. Did you know Hemsworth Estate has been hosting private celebrations for friends and family of the Guinness family since 1955 at Hemsworth Estate? This history of hosting special occasions is what inspired us to open the estate to the public in the first place.

Only a year after Jack and Frida Guinness bought Hemsworth, they hosted the wedding of their daughter Diana, and there has been birthdays, weddings, and all sorts of celebrations since.
