After all my trips to Japan; experiencing all 4 seasons and after attending the biggest food exhibitions in Asia, I've realized that the "Authentic Japanese Taste" varies not only per prefecture but also per season and per dish.

Takoyaki in Osaka taste different from takoyaki in Tokyo.

Matcha in Kyoto taste different from matcha in Hokkaido.

Ramen is most mouthwatering during winter, and the list goes on.

To me, there's no "one-way" Japanese taste because even how they prepare their dishes differ from each other. You can even see "Osaka style" or "Hiroshima style" in some of their food packaging. But the umami, the process -- the whole thing -- is still and will always be distinct to Japan and their culture.

Here in Tako Bar, we aim to incorporate Filipino touch in the food that we serve without jeopardizing the way it has to be done.
