🧂 Baking Soda (Sodium Bicarbonate)
• Type: Pure chemical (base)
• Needs an acid to work: Needs acidic ingredients like lemon juice, vinegar, curd, or buttermilk to activate.
• Action: Produces carbon dioxide (bubbles) immediately when mixed with acid and liquid.
• Use: Recipes that already have acidic components.
• Example: Buttermilk pancakes, banana bread (with ripe bananas), lemon cake.

🧁 Baking Powder
• Type: Mixture of baking soda + acid (like cream of tartar)
• Double-acting (usually): Reacts once with moisture, and again with heat (in oven).
• Doesn’t need extra acid: Already contains the acid it needs.
• Use: Recipes without naturally acidic ingredients.
• Example: Sponge cakes, vanilla cupcakes, plain cookies.

Tip:
• Too much baking soda → Soapy/bitter taste
• Too much baking powder → Can taste metallic

Crème Brûlée Cheesecake

Ingredients:

1 1/2 cups graham cracker crumbs
1/4 cup sugar
1/2 cup unsalted butter, melted
3 (8 oz) packages cream cheese, softened
1 cup sugar
1 tsp vanilla extract
3 large eggs
1/2 cup heavy cream
1/4 cup brown sugar (for topping)
Preparation:

Preheat oven to 325°F (163°C). Grease a 9-inch springform pan.
Combine graham cracker crumbs, sugar, and melted butter. Press into the bottom of the pan to form the crust. Bake for 10 minutes, then set aside to cool.
In a large bowl, beat cream cheese and sugar until smooth. Add vanilla and eggs, one at a time, mixing well after each addition. Stir in heavy cream.
Pour the cheesecake batter over the cooled crust and bake for 50-60 minutes, until the center is set. Let cool, then refrigerate for at least 4 hours.
Before serving, sprinkle brown sugar evenly over the cheesecake and use a kitchen torch to caramelize the sugar. Enjoy!
