Lion’s mane mushrooms(Mountain-priest mushroom, Bearded tooth fungus, and Bearded hedgehog) are large, white, shaggy mushrooms that resemble a lion’s mane as they grow.
They contain bioactive substances that have many beneficial effects on the body, especially the brain, heart, and gut.
Also known as Hericium erinaceus, hou tou gu or yamabush*take(Japanese), have both culinary and medicinal uses in Asian.

Kinoko (mushrooms) Okowa Chimaki style(wrapped in bamboo leaves)
**Okowa (おこわ, 強飯) is a Japanese steamed rice dish made with glutinous rice, meat, and/or vegetables.
There are a few varieties and the popular ones include: Azuki red beans – Sekihan (赤飯) Bamboo shoot – Takenoko Okowa (たけのこおこわ) Chestnuts – Kuri Okowa (栗おこわ)
**Chimaki is glutinous rice balls or dumplings wrapped in bamboo leaves.

✈️🧳Travel with us to Japan to discover authentic flavors, culture and gastronomic secrets!
①Taste of Umami and we will cook Dashi, the fundamental Japanese soup.
②How to cook the delicious Unohana (Okara sautéed with vegetables. Okara is the pulp obtained from soymilk production). Tofu dish with miso spice sauce
③Classic Sunomono salad.
④Sweet tooth:
Tapioca Moti Crepe and Azuki bean filling and fruit.
We will make our own soymilk and taste Matcha Latte to wrap up our experience.

✈️🧳Viaje connosco até ao Japão para descobrir os autênticos sabores, cultura e segredos gastronómicos.
👩🏻🍳Nesta jornada, a nossa guia será a chef japonesa Emiko Nakamura Smith da @casa.de.culinaria.emiko
Original de Fukuoka, Japão, com mais de 30 anos de experiência no mundo culinário, ela aprimorou as suas habilidades numa variedade de ambientes, incluindo restaurantes, aulas de culinária e serviços de bufê. A sua experiência estende-se a uma variedade de cozinhas, incluindo pratos japoneses, coreanos e franceses. Emiko tem também um profundo conhecimento da ciência e dos sabores dos alimentos.
🍜Emiko irá explicar o sabor do Umami e irá cozinhar Dashi, a sopa japonesa base para muitas outras variantes. Em seguida, aprenderá a preparar o delicioso Unohana (Okara refogado com legumes. Okara é a polpa obtida da produção do leite de soja.) Na próxima parte da jornada, aprenderemos a preparar um tradicional prato de Tofu com molho de especiarias e miso e salada Sunomono.
Para a parte da sobremesa irá aprender a fazer o guloso Crepe de Tapioca com recheio de feijão Azuki e frutas.
🍵Faremos nosso próprio leite de soja e provaremos Matcha Latte para encerrar a nossa experiência.
