It’s with these few words that I come to show you my great satisfaction at having collaborated with you on the event: Marrakech at So/ , which has brought us together in recent weeks. I am grateful to you for giving me much more than your support, your professionalism and your involvement. To carry out this project successfully, there is no doubt that I couldn’t have met such collaborators as you. Your talent and your investment made it possible to bring this wonderful professional adventure to a successful conclusion.
With a lot of nostalgia, this event is coming to an end. Nevertheless, I keep in mind, the memory of a fruitful collaboration and a successful work.

Who’s behind Walima?? A native of Casablanca, Safia was raised amongst a rich and traditional Moroccan Fessi culinary heritage.  Her childhood was filled with scents, flavours, and the sophisticated pallet of her mother’s food.  This upbringing would, years later, serve as a source of inspiration and guidance for her culinary creations.  Initially, Safia left Morocco to study architecture in Paris.  She worked as an architect primarily in the field of collective housing.  An architect by trade and a cook by heart, Safia rediscovered cooking after her first child was born.  She spent time cooking and rediscovering her mom’s recipes, but this time, made them her own by using her formal training in symmetry and design.   
With Walima, Safia is proud and delighted to share the rich heritage of one of the world’s most acclaimed cuisines: Moroccan Cuisine.  A sensory experience of escapism, authenticity, and tradition.  in

One of the best things about Eid Al Adha is the Moroccan mouthwatering, moist, and tender lamb mechoui. In Morocco 🇲🇦 It’s usually enjoyed on the second day of Eid, where all the family gathers for the celebrations.

Mechoui is traditionally prepared by roasting a whole lamb either on a spit over a fire or in a pit in the ground. The meat is eaten by hand with salt and cumin for dipping.

As most home ovens can't accommodate a whole lamb, the mechoui calls for slowly roasting a leg of lamb or shoulder in the oven until the meat is tender enough to pull off the bone.

Slow roasting with a very low temperature can take up to many hours, but you'll find the long cooking time well worth the wait as the meat will be so buttery tender that it can easily be pulled from the bone by hand. 🇲🇦 in 🇸🇬 #عيد

Harira is a classic Moroccan comfort soup made with tomatoes, lentils, chickpeas, fresh herbs, dried spices, and meat, making it a filling and satisfying dish. Although served year-round, it is particularly popular for breaking the fast during Ramadan. It can be offered as an appetizer or main, depending on the serving size, and is usually served with lemon slices (or lemon juice), crusty bread, figs, and a honey-rosewater flavored pastry called chebakia. in #رمضان

Meet Safia, the talented chef behind Walima!
Walima is proud to take part in this year Francophonie Festival organised by member embassies of the international organisation of the Francophonie. Walima is participating in the Francophonie-EAT!, the gastronomy segment of the festival, where talented chefs from different countries, share their curated recipes!

This event is organised in collaboration with .sg and

We are thrilled to present along with Moroccan Chefs Rizlane and Mohammed Tazi, a monument Moroccan dish with local Singaporean inspiration: Chicken Pastilla with Gula Mulaka! Check out our video segment on how to prepare this dish on March 15, 6pm Singapore time on the social media platforms of organisers and the page of the Embassy of the kingdom of Morocco in Indonesia.
