Today we demonstrated how to make traditional hand-pulled Biang Biang noodles. This type of noodle is a specialty noodle in Xian, the capital of China's Shaanxi Province.

It is sometimes described as a belt noodle as the width of the noodle is as wide as a trouser belt. It is also called a Biang Biang noodle after the sound of dough hitting a counter when being pulled.

Biang Biang noodles are one of the easiest hand pulled noodles to make. What's so special about it is that just 2-3 noodles will make you very full.

We served these biang biang noodles with three different sauces: traditional soy and vinegar, tofu with tomato and basil, and zha jiang noodle sauce.
