I haven't made a post in a while, so I wanted to create a dish that warms the soul because the weather is changing. I immediately thought of chicken chili. I am an expert when it comes to beef chili, but why not challenge myself? The spices that hit my tastebuds when I went in for the first bite was overwhelmingly delicious. [ 117 more words ]

I have never met a kid that didn't love tater tots, my girls saw me take them out of the freezer and went nuts! I'm sure they had no idea they were going to get this dish. Just the fact that they saw tater tots which they almost never have, gave them the impression that lunch would be awesome. A sirloin roast was grilled and I needed to put together a very quick meal. I happen to have a couple of summer yellow squash that I had not used, a red onion, and a cabbage. This is the lunch that I made for my girls yesterday during their lunchtime for virtual school. Of course, I wanted to make something fun that resembled a school lunch but with a twist. They love Hot Pockets, which I do not buy often; and pizza, so I decided to combine the two and make an amazing lunch dish! Ok, for starters this mac-n-cheese was amazing! It was storming so I wanted to cook a meal that was comforting; there's nothing more comforting than pork chop and macaroni and cheese. The pork chop was broiled and glazed with my homemade BBQ sauce; the girls named the sauce Holy Sauce; it's that good! I broiled the chops for 7 min on both sides, glazed them with the Holy sauce and put them back in the oven on 500, and baked for an additional 5-7 minutes to set the sauce. [ 425 more words ]

This dish was HOT, HOT, HOT, forget spicy! It was not my intention to make it extremely hot, I knew it would be spicy, but people; it was so hot I could only take two bites. My husband and youngest daughter who is 10, absolutely loved this dish and got seconds. The shrimp and chicken had a very nice crunch even when tossed in the sauce because I dredged both lightly in corn starch and fried in corn oil. [ 122 more words ]

My daughter turned 12 and her absolute favorite meal is Lasagna. When I asked her what she wanted for her birthday she asked for my lasagna with garlic bread and no salad! It took us the longest to figure out why she despises salad; one day we had a revelation. Payden does not like cold food, so tuna or chicken salad, she asked for it to be warmed in the microwave; the same with potato salad and any type of pasta salad. [ 187 more words ]

I have very fond memories of stuffed eggplant, Granny grew eggplant and would pick these from her garden to make this dish. Salad is always a go-to for me, and of course, I love Salmon. The salmon was marinated in bourbon, olive oil, lemon juice, soy sauce, garlic paste, and crushed red pepper. This is one of my dad's favorite dishes; he calls it "Liver, Onions, and Eighty Weight Gravy". The gravy has to be a perfect consistency... definitely not thin but not too thick. I remember making him this dish many, many years ago, he looked at the gravy and said, "this is not eighty weight gravy, this is forty weight". I knew then he was not pleased with the dish so I tried to quickly thicken the gravy with a corn starch slurry and added a bit of "Kitchen Bouquet". [ 181 more words ]
