Cooking without measuring is my love language because your definitely gonna feel alll the love in the flavor. Thankful for my ancestors everytime they whisper that's enough girl🥰🤗💕🤣 🇵🇦 Creating my happy little life, I hope you are doing the same💕 .. °•Dinner Ideas with Sundry•° Curry Shrimp and Vegetables with Bella Yellow Rice Ingredients: 1or more pounds shrimp, peeled and deveined 2 tablespoons curry paste (adjust according to your spice preference) 2 cup broccoli florets 2 cup spinach, washed and chopped 1/2 red onion, thinly sliced 1 cup mushrooms, sliced 1 1/2 cups yellow rice (cooked according to package instructions) 1 can (13.5 oz) coconut milk or 1 cup heavy cream 2 tablespoons Olive oil or Butter Boiled creamer potatoes (optional) Salt and pepper to taste Optional: Fresh Scallion for garnish Instructions: Prepare Yellow Rice: Cook the yellow rice according to the package instructions. Set aside. Sear Shrimp: Season the shrimp with salt and pepper, Sazon, Jerk and curry powder. In a pan over medium heat, add 1 tablespoon of Olive oil. Sear the shrimp for 2-3 minutes on each side or until they turn pink. Remove the shrimp from the pan and set aside. Saute Vegetables: In the same pan, add another tablespoon of vegetable oil. Saute the red onion, mushrooms, and broccoli until they start to soften. Add the spinach and cook until wilted. Add Curry Paste and Seasoning: Stir in the curry paste, ensuring that the vegetables are well-coated. Season to taste. Cook for an additional 2-3 minutes. Pour Coconut Milk or Heavy Cream: Pour in the coconut milk or heavy cream, stirring well to combine. Bring the mixture to a simmer and let it cook down for about 5-7 minutes, allowing the flavors to meld. Add Seared Shrimp: Gently add the seared shrimp back into the pan. Let the curry simmer for an additional 5-7 minutes until the shrimp are fully cooked and the sauce has thickened slightly. Serve: Plate the yellow rice and ladle the currie
