We're calling this one "The Chef's Grill" as in featuring a grilled Berkshire pork chop as the star of this brand new menu.
Berkshire is heralded as the Waygu of pork. It is known for its intense, nutty, and sweet flavor and is prepared like a steak. This breed of pork is fed high-quality grains, which contributes to the richness of the meat. Chef David is preparing this iteration with cherry compote, mashed sweet potatoes, and haricots vert with pearl onions and bacon. We've decided to pair this with our 2021 Cabernet Franc, medium bodied and rustic with a deep red cherry mid palate. Absolutely can't wait for this menu!
