Apple Pie Egg Roll Ups
Ingredients
* 3 cups of apple chunks, peeled and cut into chunks, I use Granny Smith
* 2 tsp Cornstarch
* 3 tsp granulated sugar
* 1 ½ tsp cinnamon
* ½ cup cold water
* 1 tsp vanilla
* 6 egg roll wrappers
Instructions
FIRST STEP:
Mix together in a small pan the water with the cornstarch
Add the apples and sugar and vanilla
SECOND STEP:
Simmer on medium heat until the apples begin to soften
Pour the apple mixture into a bowl
THIRD STEP:
Set to the side and allow to cool for about an hour
Once cooled, preheat the oven to 350*
FOURTH STEP:
Lightly flour the surface area for the egg roll wrappers, lay them out
Spoon ⅓ cup of apple mix into the center of each wrapper
FIFTH STEP:
Using your fingers, Tap the edges of the wrapper with water on all four sides
Bring all four edges in approximately ¼ inch. This is to hold the filling in place
SIXTH STEP:
Begin to roll the wrapper lengthwise until completed.
Seal with a touch of water
Place each rolled wrapper onto a parchment lined baking sheet
SEVENTH STEP:
Spray lightly with cooking spray and place on center rack in the heated oven
EIGHTH STEP:
Bake for 25 to 30 minutes
You can sprinkle with cinnamon sugar mix, a light dusting of confectioner’s sugar or make a simple glaze with confectioner’s sugar and milk.
Then drizzle over the egg rolls
