Fridays Catering presented an intimate gathering of friends with a taste of our picturesque state. The menu showcased Charcuterie Cups, cowboy caviar pasta salad, Shaved Brussels Sprout Salad with Maple Dijon vinaigrette, Brie Stuffed Elk Burgers, and grilled steak crostini with red pepper Chimichurri sauce. To complement the savory dishes, a creamy Horseradish Cream Sauce and Baked Truffle Fries were served. The dessert menu featured Huckleberry Mousse Tartletts and Grilled Peaches with Mascarpone. Fresh cream cheese danishes and a fruit plate were also prepared for their breakfast the following day.

Thursday's catering adventure involved creating a four-course dinner for a family of 27 at their vacation rental. The menu featured Green goddess wedge salad, Shaved Brussels Sprout Salad with Maple Dijon vinaigrette, Grilled steak crostini with red pepper Chimichurri sauce, and creamy Horseradish Cream Sauce. Brie Stuffed Elk Burgers and truffle fries were also served, followed by a luscious Berry Cobbler for dessert, making for an unforgettable dining experience.

Did you know that you could make your own Jerk Seasoning with some staple ingredients you probably already have in your pantry ?!?! Here is my recipe I used for my Jerk chicken sliders 😋
1 Tbsp garlic powder
2 Tsp cayenne pepper
2 Tsp salt
2 Tsp ground black pepper
2 Tsp dried thyme (or use 1 Tsp ground thyme)
2 Tsp brown sugar
1 Tsp ground allspice
1 Tsp dried parsley
1 Tsp paprika
1/2 Tsp hot pepper flakes
1/2 Tsp ground cinnamon
1/2 Tsp ground nutmeg
1/2 Tsp ground clove
1/4 Tsp ground cumin

Today, let us pause to remember a magnificent culinary hero of the South, Mrs. Eugenia Duke. In 1917, Mrs. Duke began selling sandwiches to the soldiers stationed at Camp Sevier, near her home in Greenville, South Carolina. The sandwiches were a hit and her business soared, primarily because of her amazing homemade mayonnaise.
Today, Duke mayonnaise is the 3rd largest mayonnaise brand in the United States (behind Hellmann's and Kraft). Its popularity was at first largely limited to the South but in 2017, Duke's mayonnaise became available throughout the U.S. and also in New Zealand, Australia and the Middle East.
Duke’s is incomparable, of course, and the quality of our lives would be greatly diminished without it.

Make sure you stop by the Belt Golden Agers Senior Center during the Farmers Market this Friday in Belt from 4-7pm or until we sell out. Come early if you dont want to miss out. We Will have Tres Leches Cake as well this week. Comment below if you are expecting to come so I make sure we have enough food. We ran out last time.

We had the Pleasure of Catering for the Billings Central Catholic High school Senior Retreat for the 2nd year in a row. Such a fun bunch of seniors on their last week of school before they embark the journey of adulthood. We look forward to the next bunch of seniors next year 🥰

Had the Pleasure of making some Amazing breakfast Sandwiches for some of the Lineman with Sun River Electric Co-Op who are still working on restoring power in alot of places from the last big storm. I did Bacon Egg & Cheese on toast with Ghost Pepper cheese & a Sriracha mayo 😋 A huge thanks to all our lineman out there and all that you do 🙌
