Next up on our seasonal, local and organic rotating menu is chicken parmesan!
Notes on the process from Chef Peter
After the organic free range chicken is broken down, the pieces are submerged into buttermilk overnight to brine and tenderize. We then dredge them in our Capay Mills single grain varietal wheat flour that is the entire wheat, never sifted nor bleached. It is organically milled in Northern California about two hours north of the East Bay.
Once dredged, the chicken is draped in Organic Burroughs Family Farms eggs and finally, rolled in bread crumbs from leftover house-baked bread that has Parmesan mixed in.
Once the chicken is coated, it is then fried in rice bran oil until cooked through. The chicken is topped with house-made tomato sauce and sprinkled with mozzarella cheese that will melt in the oven upon reheating.
This week, there is also the opportunity to enjoy the chicken in a waffle sandwich. Instead of being sauced, we put it between two Belgian waffles that give sweetness and crunch with pearl sugar. It is a great classic comfort.
