Do Over! My friend is super pregnant, and her favorite is Salmon. So, you know I had to make the again. This time I followed the actual recipe, and added some Fresh Mushrooms and Spinach to the mix. Grilled Salmon with Balsamic Glaze on the side, or right in top if you’re country like me. I’ll put a pic of the plate in comments.

A friend told me about a pasta dish with Boursin, Roasted Tomatoes, and Onions.
I didn’t have enough Boursin, so I added about 1/3 small block of Feta with Grape Tomatoes, Bacon, fresh Thyme and seasonings and roasted it for about 30 minutes. I had some Prosciutto left over, so I browned it and added it to the dish. Then, I oven roasted some Chicken Breasts seasoned with a simple rub.
Once everything was cooked, I combined it and added some al dente pasta.

Easy Peasy, but so yummy! Thanks Lindsey

Pesto & Mozzarella Stuffed Chicken Breast ready for my client’s family.
They requested roasted Brussel Sprouts and I’m including a salad for some color. This will serve at least 6, and all they will have to do is warm the whole pan in the oven when they are ready to serve.

This is one of my go to weekday dinners. Yes, I used pans, but it only took about 15 minutes.

1. Chicken & Cheese Mini Quesadillas
-Avocado Oil
-Pre Pulled Rotisserie Chicken
-Monterey Jack Cheese

2. Lazy Street Corn
-Avocado Oil & Butter
-Canned Corn (Drained)
-Cotija Cheese
-Sour Cream
-Pre Chopped Cilantro

3. Canned Black Beans (Undrained)
-Chopped Pickled Jalapeño & some of the juice
-Cotija Cheese

Bam!

Add a snack cup of Smashed Avocado if you freaky

My kid says it’s her favorite dinner 😂
