It’s not worth posting unless it’s actually worth eating! Some might disagree, but when I bight into something pretty that doesn’t taste good I’m extra disappointed 🥲

This particular dish has a lot of components that you can’t necessarily see but can definitely taste. Here are all the details:

Kiwi mint dressing with olive oil, green onions, maple syrup, white balsamic vinegar, salt and pepper.

Jicama salad with cilantro, lemon, jalapeños, green onion, h**p hearts, salt and pepper.

Salmon bites with Bitchin sauce and pickled green beans.

Radicchio lettuce wrap with tahini miso tofu and cherry tomatoes.

Hard boiled egg with truffle salt and pepper.

Two Greek olives 🫒

Even on days where I feel lost, food is a guiding light!

I made this fennel root salad the other day when I was feeling down. A couple bites in after some reflection, I felt a bit better, nourished and grateful for the little things.

Try shaving fennel root with chopped walnuts, cherry tomatoes, h**p seeds and a lemon/olive oil vinaigrette! 🍋

Got to the top of the Chestnut Ridge where I was supposed to cook dinner for and .sears but couldn’t find my adventure sous chef , who was driving the mobile kitchen. The trail was covered in deadfall and mud, so Casey eventually abandoned ship. With spotty service, we eventually reconvened in a meadow to cook some pad thai but not after almost flipping the four wheeler and nearly running into a giant moose.

From ranching to running….turns out riding horses all summer doesn’t prepare you very well to run a 50k in the mountains.

Shout out to the bacon, potato chips, orange slices and chocolate I ate along the way to keep me moving!

Some other highlights included physically bumping into a black bear, losing the trail and doing two extra bonus miles, and accidentally dumping an entire pitcher of electrolyte mix on my head thinking it was water 🤣

I also met a lot of amazing new friends on the trail. Thanks Patrick #1, Patrick #2, Ramara, Greg, Sara, and Boulder Brad for keep the stoked alive.

A Day…

4:00 AM: Grasshopper the mule freaking out about a black bear in camp

5:00 AM: Making Cowboy coffee in the dark

6:00 AM: Cooking pack lunch grilled Rubens for 10 ladies on a backpacking trip.

7:00 AM: Making Dutch oven biscuits and gravy for the ladies before they start hiking.

8:00 AM: Pack up and head for hurricane pass. Stumble upon the black bear that my friend, grasshopper met earlier.

11:00 AM: Cut off, trail from hurricane pass onto the west ridge of the South Teton! Went for a scramble through some steep choss.

3:00 PM: Running late, so I skipped some switchbacks, did some scre-ing and raced back to camp.

3:18: Stopped and picked a bunch of Chantrel mushrooms in a field. Gold mine.

3:46: Stopped again, and swam in a little waterfall. Really running late. Sprinting down the trail.

4:00 pm: Put on my nice shirt and bolo tie and jumped into the kitchen to make cocktails and appetizers for the ladies.

4:30: Served bruschetta bites, and hot toddies.

4:46: Joined Cowboy Rob chasing that goddamn black bear out of camp again.

6:00 PM: Served wild chanterelle, mushroom and blue Bell Bolognese with Caesar salad.

8:00 Sat around the campfire listening to cowboy Rob, recite old poems

9:00: Said hi to the horses before going to bed and reading a little bit of catcher in the rye before hitting the hay.

As much as I like slapping a steak on the fire in the woods, I also love designing an intricate menu and setting a fancy table!

No better place to cook high-end cuisine than with the folks at who facilitate the most magical yoga retreats you can imagine.

Happy Monday Recipe! Im convinced that healthy snacks are a the key to active living! Try out this vegan, sugar free, gluten free date walnut muffin! Hope you enjoy 😁 Boil 1 cup dates, 1/2 cup raisins, and 1/2 cup prunes in 1 cup water for 10 minutes. Add 1/2 cup vegan butter and a pinch of salt. Mix and pull from heat. Mix: 2 cups GF flour and 1 Tbsp baking powder. Mix: 3 tablespoons vegan egg substitute and 1tbsp vanilla. Add date mix and egg mix to flour blend. Add 1 cup walnuts, 1tbsp flax, 1tbsp hemp hearts, 1tbsp coconut flakes. Mix with spatula. Bake in greased muffin tin at 350 for twenty minutes!
