📸 About last night dinner... I was in the mode for some Trinidadian pelau so I made a pot of de best.. let me tell you so rich and creamy ,rice cooked to perfection🤤🤤 didn't even have time to put the traditional salad on the side I went straight at it and boy was a delicious 😋 👌🏾 🔪 🔥😋🏆

☀️ Just had to post Not my dish but did helped with the plateing just a gorgeous dish utilizing my skills when needed 🙌🏾🙌🏾👌🏾This week, one of our guests brought in a cleaned, fresh duck after a day of hunting for our chef to prepare! The fresh duck breast was served wrapped in bacon and stuffed with mushrooms and chestnuts with a side of garlic mashed potatoes and Brussels sprouts with duck confit cranberries and mushrooms.

☀️ showcasing some modern Caribbean cuisine has definitely been eye Turner for those who enjoy spices and bold flavors growing up in 🇹🇹🇺🇸Trinidad it's a melting pot of so many different cultures that it definitely attached oneself to different flavor profiles .....😋

As I say cheers 🥂 to another Thanksgiving 🦃🍂 I reflect on our normal routine 🤔💭from making a citrus and apples brine this year which was very delicious to work flow feeding over 600+ reservations then back home for a feast with the family. This is our in a very demanding job work hard yet still balance the scale for family values 🎯 then relax with a big glass of ponche de creme😋 today was a good day🥃👍🏾 🔥👑💚💛💖 more Life more 🔥🔥♥️

All in a days work it was a home run 🎯.the last time I did this dish was with a few improvement and different playing but still top racking as the rest..I have for you softshell Crabs stuffed with … asparagus tips, confit heirloom tomatoes… garlic Mashers and Maltaise sauce for de win🎯 😋🥩♨️ 🔥🙏🏾 🔥🔥 🥂
