COOKING WITH BUTTER, OIL OR GHEE
Cooking Oils:
Olive oil is delicious and healthy and we recommend using it as a finishing ingredient and not for cooking
Flavourless oils are ideal to highlight the natural flavours of seafood and include: Corn oil, groundnut/peanut oil, sunflower oil
Butter Poaching:
Chef Stephen Hodges famous “Bubble and Froth” is a delicious technique
Melt a good k**b (1-2 tablespoons) – it is ready when it is foaming and bubbling
Great technique for salmon and barramundi minute steaks, prawns and scallops
Ghee:
A type of clarified butter which retains minerals and nutrients that are commonly lost with high heat
A healthier cooking fat option
We recommend ghee for use in cooking seafood for its clean absorption into fish and for the way it enhances the delicate flavours of the sea
Compound Butters:
Made by whipping fresh butter with other ingredients including spices and herbs, to create flavour profiles
Place a small disk on your seafood when grilling or baking in the oven for added flavour
Cooking seafood is very simple and very quick. No matter what you are experimenting with, remember to always stick to the fundamentals of Time, Temperature and Technique to get the best outcome.
