Do you know ? If you regularly eat oysters in the lowcountry, you should. His are remarkable and one of the few oysters we work with in the South.

“We grow our oysters in floating growing units/cages in Steamboat Creek, a tributary of the North Edisto River on the north end of Edisto Island. Steamboat Creek is five miles from the coast with no freshwater inputs within the 350,000 acre ACE Basin salt marsh ecosystem. This gives us a flavor profile that balances a medium/high level brininess with the earthiness characteristics of the marsh that epitomizes the lowcountry.”
