Family sized meal prep today- Italian veggie soup with fresh biscuits, chicken fajitas with lime cilantro rice and beans, chicken Alfredo pasta bake, salads and chicken rice pesto bowls for lunch. But I think my favorite was the breakfast burritos with venison bacon from the teenage son’s deer last season. I love using these kinds of local ingredients, you can’t them everywhere!

This vegetarian meal prep is totally hitting the spot this week. Roasted broccoli, sweet potato and onion will probably be paired with some over easy eggs for a quick dinner. Spinach, parm, quinoa for lunch, and the weird looking red stuff in the pan is my flour free seedy breakfast bake. I was craving beets so blended some up and added them to the mix, not everyone’s cup of tea but I love it! It’s so nice when you can customize what you eat to fit your tastes, I can totally help!
