My Mexican Catering Menu

Tamales: Pork; Beef; Veggie; (spanish rice, green chiles & pepperjack cheese) Popper (mozzarella cheese & jalapenos) and Chicken :$20 per dozen

Enchiladas: Chicken w/White Sauce; Beef w/Red Sauce; Cheese w/Red Sauce and Chicken Chili Verde w/Green Sauce - $20 per dozen

Spanish Rice (Serves 4) : $12

Refried Beans (Serves 4) : $12

Stuffed Jalapenos (2 doz) : $15

Enchilada Sauce/Tamale Gravy $3

Turkey Lettuce Wraps

1 lb Ground Turkey
1 bushel of green onions, chopped
1 T minced garlic
8 ou Water Chestnuts, chopped
1 T sesame oil
Salt, pepper, garlic powder & onion powder to taste

Sauce:

1/4 c Hoisin Sauce
1/4 c Soy Sauce
1 T Chili Paste
1 T Rice Wine Vinegar
1 tsp Cornstarch
1 T minced Ginger

Brown ground turkey in sesame oil and season. After the meat has browned, add chopped green onions. Once the onions are softened, add the minced garlic, chopped water chestnuts, and sauce.

Once the sauce has thickened add this yummy mixture to your favorite choice of lettuce and enjoy!

Fettuccine Alfredo

1/4 c butter
Optional to add: shrimp, chicken, scallops, asparagus or mushrooms
2T minced garlic
1 pint heavy whipping cream
1 c shredded Parmesan cheese
Season to taste: salt, pepper & garlic powder
16 ou Fettuccine (reserve 1/4 c pasta water)

Melt butter in large skillet then sauté your shrimp or whatever your above preference is and season with salt, pepper & garlic salt. Once the shrimp is cooked, remove from skillet and set aside.

Add your minced garlic and sauté. Once your garlic is cooked, slowly add in your heavy cream, Parmesan cheese and seasonings.

After your pasta has cooked, add in 1/4 c of the reserved pasta water, to the Alfredo, to thicken your sauce.

Once your sauce has thicken, add back your shrimp and pour your Alfredo sauce over your cooked fettuccine. Stir together & serve 🥰

I found the perfect Chocolate Chip Cookie recipe & wanted to share 🥰

I added all the top four ingredients to my mixer and let it slowly blend, while I added the dry ingredients in a separate bowl … stirred them together and gradually added everything to the mixer.

Then I folded the chocolate chips in. Scooped the cookie dough onto parchment papered cookie sheets and baked them for 10 minutes. Recipe makes around 30 cookies.
