Every now and again I get to create a meal that is so very special. This was one of those times. I am so incredibly appreciative of clients that trust me to create for them and curate an experience, and the cherry on top is that they are just wonderful people.

A huge shout out to Rashad who created the cocktails and executed service at the absolute highest level. I am so proud to have you on my team. And also a huge shout out to Jaclyn who jumped in to help behind the scenes, you were clutch and made the night seamless.

The menu & pairings are below. I also had one guest that had a fodmap restriction, so I created an entire menus to accommodate, those dishes are in the pictures. I firmly believe that every guest deserves to have an extraordinary experience, and I think we gave that to her as well.

We’ve been for two weeks and I knew my husband would want a taste of Jamaica for his birthday! I broke out the marinade we brought home and fired up the , this just hit right! Now all we need are some gorgeous blue waters, palm trees and ocean breeze!

Jamaican Jerk Chicken with Sweet Plantains, Seasoned Rice & Beans, and a little Arugula Salad with Pickled Beets, Stilton and Candied Smoked Pecans . Rum punch was served and we finished with Tres Leches Cake.

Holy god this pasta is amazing!! I saw it in this month’s ‘s feature on Chef Deau from and could not stop thinking about it! Yeah, no words just god damn delicious!

Cooked up some hot Italian sausage and added it into ‘s dish because you all know that he lives for the meats, but I kept mine vegetarian friendly . Subbed in a chiffonade of spinach because I didn’t have mustard greens on hand and did them up in the pickle, used ‘s to get things going making the sauce. Added a little basil chiffonade in at the end and a little zest & squeeze of lime. Otherwise I just stayed true to chef’s recipe. Happy food dance over here! Thanks Chef .au for sharing this with the world! 😊
