I will be cooking some this week and next. I have casseroles ordered, so will make extra, either to freeze or to sell. Will let you know what and when to see if anyone else wants to order. I really need to do this on texts, not here. Tried just using Facebook but it’s not convenient for me. And I don’t do messenger.
So please read and understand…..I will only take orders through texts!!!

I went to United in Abilene today and as I walked by their premade dishes I glanced at the prices! And I realized it was okay that I had to raise my prices!! They charge OVER $30 for a casserole not as large as mine, and then add tax to that. As bad as I hate to do it, I have to raise the price of my casseroles to $35. I include tax with that so mine are still cheaper (and better)!! I always hate to raise prices, but as much as I love cooking, I can’t lose money doing this!! And my costs have more than doubled, as any one who buys groceries knows🫤. Just wanted to give a heads up to my wonderful customers . Thanks so much for always supporting me❤️❤️

Cream Cheese Enchiladas Recipe 🫶❤️
Ingredients:
1 (8 oz) package cream cheese, softened
3 cups shredded cooked chicken
2 cups shredded Mexican cheese
3 tablespoons unsalted butter
2 cups chicken broth
1 (4 oz) can diced green chiles
8 (6-inch) corn tortillas
3 tablespoons all-purpose flour
1 tablespoon lime juice
Optional: 1/2 teaspoon chili powder
Salt and pepper to taste
Fresh cilantro for garnish
Optional toppings: diced tomatoes, sliced olives, sliced jalapeños, chopped green onions
Instructions:
Preheat the oven to 350°F (175°C) and grease a 9x13-inch casserole dish.
In a bowl, combine half of the cream cheese, chicken, 1 cup of cheese, lime juice, and chili powder (if using). Season to taste.
Fill tortillas with 2-3 tablespoons of the mixture, roll, and place seam side down in the dish.
In a saucepan, melt butter, whisk in flour for 2-3 minutes. Season, add chicken broth, green chiles, and the remaining cream cheese. Cook until thickened.
Pour the green chile sauce over enchiladas and top with the remaining cheese.
Bake for 20-25 minutes. Optionally, broil for a lightly browned top. Allow it to rest before serving. Garnish with cilantro and serve.

Just a reminder…. I try to keep casseroles in my freezer for anyone who needs a meal at home, meal for a friend, meal for a funeral, etc. I am also able to make cakes, pies, breads, cookies….. whenever you need or want them. I will still post when I’m cooking in case you want fresh! Today I will have some chicken spaghetti and lasagna fresh. It will go in freezer otherwise!!

I’ve been thinking and I normally do rolls and cakes and sides early anyway for thanksgiving because I have to wait till last minute to do the meringue pies. So if you’re willing to pick up on Sunday, November 19, I can do any of that, including dressing and certain pies (pecan, pumpkin, buttermilk …)

Just want to let everyone know….,I won’t be able to do thanksgiving orders. Will be going out of town. If you want a side or cake that can be refrigerated or frozen I might be able to do that!

There are lots of pies that can be held or frozen….pecan, pumpkin, buttermilk

Pumpkin rolls freeze great. Cakes can be frozen without icing but cream cheese icing would have to be put on later. It keeps in refrigerator a good while. Apple cake has no icing and freezes great. As does pound cake!

Broccoli casserole, sweet potato casserole, corn casserole, dressing can all be held in refrigerator or frozen.

If you want meat casseroles for after thanksgiving dinner, those can be frozen.

Rolls can be cooked and held in refrigerator or even frozen. Won’t be as good as fresh but still good.

Cheesecakes can be frozen

Breads can be frozen or refrigerated
Strawberry, pumpkin, apple, banana nut…

Thought I’d let everyone know, I’m looking at my October calendar and I won’t be cooking much in October! I’m catering for Farm Bureau, catering Garden Club, Braxton goes to shoot in ft worth, Brandon goes to state fair with tractor, Carter comes in, Brenlye has fall break and is coming in, Tatelye and Easton still have flag football, Cole is coming down, Braxton has football games, I have dentist appointment, hair appointment, two family birthdays and possible garage sale. I may cook this week a little but not sure!! Whew🤪
