There are no shortcuts to great BBQ and I have made it my mission to stay authentic to the craft. All meats are seasoned overnight and smoked low and slow over hardwood for up to 14 hours. All rubs and sauces are made from scratch, and when it comes to inspiration I look toward the simplicity of true Southern traditions and let the food speak for itself. Although smoking is a very slow, time consuming process it is worth every second. The result is moist, juicy meats, infused with a delicious smoked wood flavor.
