Rack of lamb with a pesto, garlic, salt, and pepper wet rub on it. It was cooked in the cast-iron skillet in the oven to an internal temp of 140. When it reached 140°, it came out and rested for 15 minutes under a tinfoil drape, and then consumed. This rack of lamb was tremendous. As I say in my videos, it was so everybody from the train.
