5 years ago, I entered a salsa making contest at work and won all three categories Hottest, chunkiest and best tasting.
This year was a little bit different. They gave everybody a tray of chips and said go try all the Salsa's" 16 entries " and just pick your favorite based on taste.
This year I made a smoked and roasted tomatillo salsa with garlic, onion, cilantro, and lots of chilies .
Craig's Barbecue took 1st place one more time lol anybody got a boat I can borrow to go with my new wakeboard lol

Craig’s Barbecue got a new member of the family today. Found a stupid great deal on a bronco just could not pass it up. Huge thanks to my son Corbin for helping me put it together. first cook a couple fat pork chops and a handful of chicken wings. 
So far so good everything turned out great .

Chicken bombs
That’s a jalapeño stuffed with lots of good stuff, wrapped in a chicken thigh, and then wrapped in bacon seasoned with my signature hot powder.
Yep that’s what was for dinner last night so good .

Made myself some Shotgun Shells
Today just for fun.
If you don’t know what these are, they are manicotti shell stuffed with basically whatever you want. Mine are filled with Italian sausage, cream cheese, diced jalapeño, seasoned with my hot powder and a sweet spicy barbecue sauce. Pretty good.

Funny story
So I have a butcher friend who tells me about a young kid that works for him. He was supposed to trim a bunch of tomahawk ribeye’s, and he ended up cutting the bones off of three of them.
My friend tells me I can’t sell these as tomahawks now. Hey Craig do you want them? I’ll sell them to You at a discount.
I gladly said yes, and thank you . Here is my first one cooked it over indirect heat got the temperature up to 115° then I moved it over to the hot side and seared it off until I got to about 125°. Pull it off and let it rest for about 20 minutes. . This steak turned out amazing perfect medium rare .
