Jalapeño Popper Soup – Creamy, Cheesy, and Deliciously Spicy! 🌶️🧀🥣
This Jalapeño Popper Soup is a rich, comforting dish with all the flavors of a classic jalapeño popper – creamy cheese, smoky bacon, and a touch of heat. Perfect for warming up on a chilly day!
Ingredients:
4 slices bacon, chopped
1 tbsp butter
1 small onion, diced
3 cloves garlic, minced
4-5 jalapeños, seeded and diced (leave seeds for more heat)
3 cups chicken broth
1 can (14.5 oz) diced tomatoes with green chilies (optional, for extra flavor)
1/2 cup heavy cream or half-and-half
4 oz cream cheese, softened and cubed
1 cup shredded cheddar cheese
Salt and black pepper, to taste
Fresh cilantro or green onions, chopped (for garnish)
Directions:
Cook the Bacon:
In a large pot or Dutch oven, cook the chopped bacon over medium heat until crispy. Remove the bacon with a slotted spoon and set aside, leaving the bacon drippings in the pot.
Sauté the Vegetables:
Add butter to the pot with the bacon drippings. Add the diced onion and cook until softened, about 3 minutes. Stir in the garlic and diced jalapeños, cooking for an additional 1-2 minutes until fragrant.
Add Broth and Tomatoes:
Pour in the chicken broth and add the diced tomatoes with green chilies if using. Bring the soup to a simmer and cook for 10 minutes, allowing the flavors to meld.
Make it Creamy:
Lower the heat and stir in the heavy cream, cream cheese, and shredded cheddar. Stir continuously until the cheeses are fully melted and the soup is smooth.
Season and Serve:
Season with salt and black pepper to taste. Ladle the soup into bowls, top with crispy bacon, and garnish with fresh cilantro or green onions.
