- 2lb VELVEETA
- 1lb Pepper Jack Cheese
- 1.5lb Cooked Chorizo
- 2 Cans RO*TEL
- ½ Cup chopped Cilantro
- 1 diced Jalapeño
- @fyrstarter BLK Hot Sauce
- 4oz Garage Beer Lime
Smoke at 300⁰ while stirring every 10 minutes. Cook until the cheese has melted. Add more Beer if needed

Smoked Buffalo Chicken Mac & Cheese
Take your Macaroni & Cheese to the Next Level by adding some Smoked Chicken Breast and some Buffalo Hot Sauce.
Season your Chicken Breast with your favorite Rub and Smoke at 275⁰ for an hour and a half. Put chicken in a deep pan and add a whole thing of Chicken Broth, lots of Butter & BBQ Sauce. Braise for another hour, or until 180⁰
Boil Macaroni until al dente, cool and set to the side. Add a stick of butter and melt. Slowly add ½ cup of All-Purpose Flour. Slowly add in While Milk, string to break up the roux. Once you get the consistency you like, add 2lbs Velveeta, 1lb Mozzarella, and 1lb Cheddar. Cook until all Cheese has melted
Put your noodles in your Half Moon Pan and top with the cheese mixture and throw on your Grill at 375⁰ for 25 minutes. Top with Chicken, Buffalo Sauce, Mozzarella & Cheddar Cheese. Bake for 10 more minutes, or until Cheese is melted

Smash Burger Breakfast Tacos
- Tortillas
- Chorizo
- Eggs
- Potatoes
- Cheese
- Cilantro Lime Sauce
- Roasted Chipotle Hot Sauce
Ball up some Chorizo and spread it out across the Tortilla. Grill it Meat-side down on your Griddle top for about 5-7 minutes. Flip over and move the Tortilla to the Cooler side of the Griddle. The Bottom will continue to get crispy
Fill the Taco with Eggs, Potatoes & Cheese. Top it with your Sauces and serve

Taco Tuesday's are looking 🔥🔥🔥
Slow Smoked some Barbacoa for some awesome Tacos. Two Chuck Roasts seasoned with @oaklanddust S&P & El Jefe Taco Rub then Smoked for 3 hours at 275⁰. After that I braised for 3 more hours in some Beef Broth, 1 Can of Chiles in Adobo with 3 Peppers, 4 Cloves of Smashed Garlic, one Sliced Onion & some more Seasoning
The consomme was blended up with an Immersion Blender. The Tortillas were dipped in the consomme before throwing on the Weber Grills Griddle. The Tortillas were filled with Beef, Queso Quesadilla Cheese, Diced Onion & Cilantro.
Cooked on the Flat Top until both sides were Golden Brown. Just as delicious as Birra and in way less time
