It was an honor to do a wild game dinner at the Westphal’s house Friday night! I didn’t get very many pictures, but here’s the ones I did get.
Menu: All protein caught or shot by Bennie himself and very fresh!
Apps~ Duck breast worth orange marmalade on crostinis
~Wild caught Red Snapper ceviche
Main dish~ Balsamic marinaded Venison backstrap, wild caught Scampi with lemon burre blanc sauce over wild rice pilaf accomplices by roasted asparagus.
~ dessert was a chocolate care with antlers that I didn’t make and I didn’t get a picture of.

I continue to be blessed by providing the meal for the Good Samaritan Clinics board meeting every month. It is my pleasure to provide a great box lunch to those who serve our community so selflessly. Thank you for all you do Patti Ann Kimbrough!!🙏❤️

Good Samaritan Clinic asked me to make boxed lunches for their board meeting and of course I said yes!! I love Patti Ann Kimbrough and the work they do over there, so it’s always a pleasure to serve her board fresh organic healthy food!!

Last night I had the pleasure of creating a dinner for a 60th Birthday party for 5 couples that are best friends! It was so much fun! It’s a totally different experience to be able to have a fine dining dinner at your home, & for me to do all the work and you enjoy your guests!

The menu:
Apps~ bacon wrapped dates and shrimp ceviche
Salad~ tomato pie dressed with balsamic vinaigrette
Entree~ stuffed pork tenderloin over creamy Parmesan risotto accompanied by roasted beets in coconut oil

Last night was truly a blessing 😇 I’ve known Daren Dozier Dallas for 7 years, she’s one of the first people I met when we moved here. I met her daughter, Drennan, a few years ago. These beautiful women have the kindest hearts and show me love every time I see them. They asked ME to cater a dinner for them after the baptism of her new born son, Holden. I’m truly blessed to have people like them in my life. 🥹🙏🥰
Menu:
Spring mix salad with homemade balsamic vinaigrette
Stuffed chicken breast wrapped in bacon, stuffed with caramelized onions, spinach and
Parmesan cheese, with oven roasted asparagus all over creamy Parmesan risotto
Dessert was a puff pastry layered with fresh strawberries and fresh whipped cream drizzled with dark chocolate 🤤

Sunday I put together some appetizers last minute for a surprise party. There’s a couple people in my life where when they call I try my hardest to fit them in. Linda Dickinson is one of those ladies. Happy 70th Birthday Joe!!

I’ve been so busy lately I haven’t had time to share much. But, here’s a cocktail party for a blushing bride and groom at the Meeks house Saturday night. This was so much fun!
Menu was:
Cheese, fruit, veggie, olive and nut platter
Roasted grape tomato tartlets with pesto, fresh chèvre and micro purple basil from Stoned Epicureans
Bacon wrapped dates stuffed with fresh chèvre
Spinach artichoke dip with toasted pita chips
Meatballs
Shrimp ceviche shooters
Pork tenderloin sliders- pork tenderloin, marinated and raspberry vinaigrette, slow roasted with onions that caramelize topped with fresh purple basil micro greens from Stoned Epicureans
Chocolate dipped strawberries

What a night!! It’s always a good time at Joyce Smith-Roberson’s house!! They celebrated their Valentines day dinner with their best friends, its become an annual thing 🥰 menu was:
Appetizers ~ bacon wrapped dates and shrimp cheviche with fresh tortilla chips
Salad~ tomato pie with spring mix and fresh balsamic vinagiarette (I forgot to take a pic of the salad on top🤦🏼‍♀️)
Main dish ~ Osso Bucco (all natural Packard Point farms veal) served with the roasting vegetables and pan gravy over polenta

How good is God? SO GOOD ALL THE TIME!! We (Chef Terry Bellah, Michelle Jones and I) were able to serve 10 prime ribs to Hope Campus yesterday!! My heart is full! Merry Christmas everyone!! I pray Gods blessings for all through this Christmas season!!🙏🙌🏼❤️🎅🏻🎄

I’m still in awe of how good God is and what He does through Hope Campus. They touch lives each and everyday! I was honored when they asked me to cater their event on Saturday, Boots and Bow Ties. The event was gorgeous and had a great turn out. I just want to personally thank everyone who supports HOPE Campus. We can’t do it without you! May God continue to Bless you! 🙏❤️🥰🙌🏼

Can I tell you how fun cooking classes are!! Especially for kids!! At CRM we were blessed by Mercy with a grant so I could teach the kids while they were all home the week before school started. We learned about our 5 food groups and how important it is to NOT eat a low of sugar (highly addictive and confuses our bodies into insulin resistance). We made cute animals out of rice cakes and fruit and a healthy alternative to frozen pizza that they got to make themselves!! We had so much fun!! If you get your kids to make healthy snacks they will eat them!!

This woman means the world to me and it means the world to me that this woman asked me to cater her retirement party! I first met Janet Renwick at HOPE Campus 5 years ago and she continues to bless them every month serving dinner. She has a true heart for service and went above and beyond for me when I was there! Teach them young! (Age appropriate tasks, of course.) If you bring your kids into the kitchen with you, they are more than likely going to eat what you cook. Get them involved and they are proud of what they do!! Yes, he is wearing his sisters old apron that matches mine, don’t judge, matching aprons only make it funner.
