Hack: are you making stabilized whipped cream for the top of your desserts or fruit? If you're out of gelatin here's another way you can stabilize it. Add a little bit of sour cream. See the excerpt below "Keep everything involved in making whipped cream—bowl, cream, whisk—as cold as possible. But it turns out adding a little bit of acid can help, as can adding a little extra fat. Bingo: sour cream has both acid and fat, so that's why it helped stabilize the whipped cream"

I tried my hand at fig Jam for the first time. It was easy and the outcome was successful. The jam I made contained Rosemary and Cabernet Sauvignon. I was thinking on a hamburger with caramelized onions served on a brioche bun. What do you think? Definitely not your mother's fig Jam. LOL

Great to put my catering hat on even for a small job. Fresh lemon juice-Lemon Grand Marnier cheesecake with candied figs and Candy citrus, fresh lemon curd, from scratch whipping cream. Roasted and Glazed carrots which included fennel seed to go with the main dish which was a chicken alfredo casserole. The salad contained fresh feta so I could crumble it myself. It also contains strawberries and Trader Joe's sweet hot candy pecans broken up as well as some croutons. The dressing was from scratch it was fresh lemon juice and lemon zest, thyme crumbles, raw honey and oil. My only regret was that I was out of raw walnut oil because that's my favorite for salad dressing and it's really the 💣. This lemony dressing was so good on the strawberries. I actually made one of the salads for myself and added chicken to it for dinner. It was so good. Food does not have to be hard to make to be delicious sometimes it's just adding a spice or changing the technique. For instance the carrots: they were roasted which makes the carrots taste sweeter and the glaze was a combination of both olive oil and butter with just a tiny bit of brown sugar so they weren't drowning in sugar. And then with the fennel they were just delicious.

First wedding I've had since the pandemic. I did not cater it nor did I do the flowers. I was more in a technician's roll. I had the extreme pleasure of doing the wedding for this beautiful bride's sister. And as for the groom? I've known him since he was born. I did his high school graduation. It was such a blessing to be part of this day and it was emotional for me. The groom's mother has been a dear friend of mine for 27 years and we have done many many events together. Setting the scene; I would describe it as dreamy due to the colors that the bride's selected which was champagne, a very pale pink, gold, and off-white. The room was beautiful; Banker's Ballroom in Fresno, Ca.. I had the best crew ever. There's always problems at any event but any little problem at this event was easily fixed. The family had the utmost conscience in how they tried to make it safe for everyone. It was a beautiful night, a beautiful room, a beautiful family and the ending to a beautiful day and the start of a new chapter for these young ones.
