Soup of the moment!

Hot & Sour Mushroom 🍄
from the one and only Flavor Wizard LLC

An Asian inspired hot and sour soup. Not overly hot, but just enough that lingers on the palate and leaves you wanting more. Nicely balanced, with flavors hitting all parts of the tongue, sweet, sour, bitter, spicy, umami.

Vegan, gluten free, dairy free

Ingredients-
Oyster mushroom
Baby Bella mushroom
Button mushroom
Shiitake mushroom
Carrot
Baby bok choy
Onion
Poblano
Tamari
Sweet chili sauce
Miso
Lemongrass
Garlic
Ginger
Veg stock

Fat Tuesday is tomorrow and that means I get to cook some of my favorite food!

A few wonderful ingredients, some patience, and lots of love and you get that wonderful gumbo!

Prep all your vegetables, and cook your roux from light to dark, add your vegetables and stock and the gumbo comes alive! (The voodoo chef watching over me helps 😂 )

Course one - mixed melon in a crispy prosciutto cup, baby greens, balsamic reduction. Paired with Crane Lake Sauvignon Blanc

Course Two - Seared duck, parsnip white chocolate mashed, grilled marinated asparagus, Pinot noir and duck stock veloute. Paired with 19 Crimes Pinot Noir

Course Three - Blackberry flan, Frangelico whipped cream, honey roasted pistachio crumble. Paired with Josh Cabernet

We’re doing a slow roll-out for our autumn menu and today we’re reintroducing one of our most popular items from last fall, Breakfast Bread Pudding! Life gets so busy and hectic sometimes, it takes WAY too long for the excitement to finally hit. We’ll, it hit us today! Can you believe indoor dining cafe is having their GRAND OPENING this Saturday?!
So blessed and fortunate to be a small part of this wild ride they’re on! This is so awesome!
You know we’ll be there, and we’re feeling nostalgic.
We’ll be serving up the chicken salad sandwich that started it all for us, biscuits and gravy that we served at our first ever pop up as a business at, you guessed it, Open Door Coffee, grilled cheese sammys because they’re delicious, and an oriental inspired Cobb salad.
Can’t wait to see you Saturday to celebrate this GRAND occasion!

December 2019, I invite my friends from OpenDoor Coffee to the restaurant I’m at to enjoy a bourbon dinner pairing, filled with dreams of cooking for their little slice of heaven in Genoa, to be honest, I don’t even think they had a location yet when this picture was taken.

Fast forward to March 2022.
I sat down with them today in an almost completed shop to discuss the food menu for inside the shop, with the drive thru up and running.

Such an amazing journey thus far, and it’s really only just begun!! So grateful for these two, and so excited for the very near future for them and the shop opening, and the opportunity to cook for you coffee tribe!!!! Some deliciousness coming your way very soon!!!

So privileged and honored to be sous for this. What a guy, what a meal, what a venue!

Shrimp cocktail, pickled cucumber and fennel, fennel frond, finishing salt

Center cut NY strip, duck prosciutto wrapped shrimp, signature roasted fingerling potatoes, rappini, roasted garlic sage brown butter, fried sage

Sticky date pudding, sesame tempura banana, bourbon caramel

Chef is amazing, honored to work with him, yet again!
