New Item Alert
Cranberry Gingerbread Mini Loaf
This special tea cake is an adaptation of an recipe from her novel Delicious, in which the character makes this ginger cake every year for her father, and by the end of the book it is perfected. I was drawn the recipe because the cake uses loads of fresh ginger and orange zest plus a variety of warming spices like cardamom, cloves and fresh ground pepper.

And the big surprise is there is NO molasses which lends the cake a beautifully tan collar with specs of spices and orange zest throughout.

For our January Pop Up we adapted the recipe to include fresh cranberries studded throughout and topped with crunchy coarse sugar.
