Had some time to smoke a Brisket this weekend.
Started with a 13lb Packer
Trimmed 3.5lbs of fat and seasoned with Manny's Beef Rub.
12hrs on the UDS (topped with the fat trimmings for extra flavor) and we have the makings for some great sandwiches this afternoon
