With Thanksgiving upon us, I want to share a word or 2 about smoke rings and the affects that wood smoking has on the color of cooked turkey meat. From the United States Department of Agriculture Food Safety and Inspection Service an article about pink turkey meat, and also another article about why the bones and meat around the bones of smoked turkey may appear red. While a turkey may have the appearance of being undercooked, appearances are deceiving and the only way to verify doneness is measuring the internal temperature with an accurate meat thermometer such as a thermapen when it comes off the smoker/grill/oven.
