🚨NEW RECIPE ALERT🚨
It was a beautiful day today, so I decided to do a smoked Tri-Tip! I wanted to create a new Beef/Pork Grilling Rub that was a excellent blend of heat and flavor. Well, I think I did it! Please like and share this post! Let me know what you think.

Nice Spice Grilling Rub:
• 4 tablespoons of pepper
• 4 tablespoons of salt
• 2 tablespoons of ground mustard
• 2 tablespoons of coriander,
• 2 tablespoons of chili powder
🔥👊🔥

Tri-Tip
3.5 - 4 lbs
Liberally seasoned all sides of the tri-tip
Set smoker at 225°F
Smoke for roughly 4 hours or until an internal temperature of 135° (cook longer or less depending on preferred doneness)
!!! Let it rest for at least 15 minutes !!!

Thanksgiving in October was a success! Wanted to try a new recipe, and it was on point!

Turkey: spatchcocked, seasoned with salt, pepper, ground coriander, and mushroom umami seasoning. Smoked at 300° with maple wood. This was a 12 pound turkey and it took about four hours. But always make sure you cook until the thickest part of the breast hits 170°.

Brought it back to where it started. BBQ brined pork spare ribs!

Brine:
2 cups Apple cider vinegar
4 cups fruit juice (I used Cran-raspberry)
2 cups cheap thin barbecue sauce from grocery store
• Brine for three hours or up to overnight

Prep:
• Remove the membrane from the back of the ribs.
• if you’re like me & you don’t have the refrigerator space, place ribs in a cooler with brine and enough ice to where the ice no longer melts.

Smoke:
Smoke ribs at 225° for 2 1/2 to 3 hours or until the meat starts to pull back from the bones.
(During this step you need to mop your ribs every 30 to 45 minutes.)

Option:
Depending on how you prefer your ribs at this point, you can either wrap your ribs in aluminum foil or butcher paper and continue the smoke for 60-90 minutes.
OR—— you can just keep Rollin’ smoke and mop every 30 to 45 minutes.

When are they done?
Pork spare ribs are done when they passed the bend test. Using a pair of tongs, grab the ribs about 1/4 of the way down. Then lift the ribs off the grate, if your ribs bend at a 90° angle without tearing they are ready to go! If they are not bending very well, they are not done.

Just made some amazing Blueberry Habanero Hot Sauce!

Directions:
• Take 10 habaneros and split them and remove the seeds.
• smash 2-4 cloves of garlic depending on how much garlic you like.
• preheat oven to 425°F
• place habaneros in a bowl and drizzle olive oil and coat the peppers.
• place peppers in an even layer on a cookie sheet and cook for 10 to 12 minutes or until the peppers start to blister on the ends.
• get a pot on the stove on high heat with about 2 tablespoons of oil. And place two chopped carrots and one chopped onion and cook until translucent.
• once translucent put 2 cups of water, 1/4 a cup of lime juice, 1/2 cup of white vinegar, 1 tablespoon of salt, and 1/2 a cup of fresh blueberries.
• Bring pot to a boil then let simmer for at least 10 minutes.
• once pot is cooled, pour into a blender and blend until smooth.
• strain the sauce then pour in your desired container and enjoy!

• Follow your favorite meatloaf recipe
• Set Smoker at 225°
• Smoke for 4 Hours
(or until internal temperature reaches 165°)

Reverse Seared Ribeyes 🥩! It’s what’s for dinner!

• Rub steak(s) with oil
• Salt & Pepper each side
• Smoke on Low heat 180° until about 10° from your desired temperature.
• preheat cast iron skillet or grill to 500°+
• Sear each side for 90 seconds
• Let the steaks rest
