Made some beans and rice for dinner last night. This dish always reminds of my grandmother. Reminds of where I came from. Anyone who knows me knows, she is my culinary inspiration. I always feel like I’m conjuring her when I cook this. I remember why I cook, why it is my passion, why I truly believe it is my gift! A gift I’m grateful for! My grandmother is an inspiration worth living for! My goals, hopes and dreams are tied to the base of this bowl!!

Making some chunky vegetable soup with chicken for a friend who has the flu. It's funny, I never realized how fragrant mushrooms are. They smell amazing! The garlic, onions, carrots and celery totally helps.

Had my first consultation of the year yesterday! Super pumped for the possibilities!
As some of you may know every meeting comes with a meal. We dined on: Je**ed salmon w/ stewed tomatoes & pineapple, quinoa w/ fresh thyme & plantains.

Sweet Thai chili shrimp w/ pickled carrots, radish & cabbage wrapped in lettuce.
First, to pickle veggies: Add rice vinegar, soy sauce, salt, pepper & sugar to a sauce pan. Bring to a boil. Pour over veggies & toss. Refrigerate for 30 minutes.
Peel & devine shrimp. Mix sweet chili sauce, siracha, salt, pepper & fresh mint. Add shrimp to mixture. Coat well. Heat pan, add olive oil. When hot add shrimp & sauce. Cook shrimp until color changes.
Put shrimp & pickled veggies on clean lettuce.
Enjoy!!!
