Our own Chef Frederick spent four days mentoring Albemarle HS Culinary Arts students as they learned what it takes to take a Food Truck from Concept to Operation… including preparing their Signature Dish!

Did you know that our Professional Chef is one of a kind? Like seriously. This man and his team really know how to put together a dinner. No matter what the dietary restrictions are. We here at Glenmore are here to win your hearts over.

Todays wedding was 100% GF, Vegan and Vegetarian. How does chef prepare? By designing a special menu.

Fennel Spiced Seared Salmon w/Tomato Coulis, long grain & Wild Rice Pilaf (GF & Dairy Free

Pan roasted Lion Mane Mushroom cake with Chinichhrri Sauce, with the same rice (Vegan & GF)

Eggplant Parmesan (GF Flour, cornmeal, Gluten Free Bread crumbs)

Sides: roasted Brussels sprouts & butternut squash and rutabaga.

Side note: the smells coming from the kitchen today. So yummy. Even got to try the Lion Mane and without the sauce it was sooooo yummy…. You may be able to find these dishes on our menus going forward 😉
