A great fruit pie starts with great tasting fruit.
This was one of the best tips I learned back when I was in pastry school. When choosing apples for our Salted Caramel Apple Pie, I like to combine 2-3 different types of apples. When I can, I ask to taste a sample because varieties can change season to season. If you're new to baking apple pie, here's some pro tips in selecting apples-
Flavor- I look for a nice sweet tart balance or combine a more tart with a more sweet variety.
Texture- Crisp texture is key for having tenders apples that won't cook down to applesauce.
Juicy- Select apples that are juicy and not dry. If apples are too dry, the end result will be a spongy texture when baked.
My go to varieties- Fuji, Braeburn, Pink Lady, Honeycrisp.
There are so many varieties grown in WA state. It's fun to try adding a new one each season.
