Happy nice weather day!!!

MONDAY 9/8: Pork tenderloin rubbed with brown sugar, chile powder, cumin & garlic then grilled and served with jalapeno chimichurri sauce (on the side) with crispy smashed garlic potatoes and green beans cooked with bacon & onions.

TUESDAY 9/9: Buttermilk southern fried chicken breasts & legs served with mashed potatoes and pan fried corn.

WEDNESDAY 9/10: Traditional chicken and dumpling with onions, carrots and celery with fluffy herbed drop dumplings. This is definitely one of my biggest sellers so get your order in early.

I will be out of town celebrating my birthday in Mexico so I won’t be cooking again until next Tuesday.

Dinners are served hot and ready to eat 5-6:00 pm at The Cove on Hamblen (1101 Hamblen Road in Forest Cove). Come early to enjoy a cold craft beer or glass of wine. Need curbside service? Just text me when you arrive and I will deliver dinner to your car.

Wednesday night’s dinner is cottage pie (Shepherd’s pie made with ground beef instead of the traditional lamb) stuffed in baked potatoes and topped with mashed potatoes. TUESDAY 9/2: Creamy Cajun pasta made with Gulf shrimp and Andouille sausage tossed with Rigatoni pasta in a Parmesan cream sauce.

WEDNESDAY 9/3: Shepherd’s pie stuffed baked potatoes. Baked potatoes hollowed out and filled with savory ground beef Shepherd’s pie then topped with mashed potatoes. Served with a garden salad with home made Ranch dressing.

THURSDAY 9/4: Slow smoked pulled pork over creamy 3 cheese macaroni & cheese served with southern skillet cornbread.

FRIDAY 9/5: Nashville hot chicken tenders with home made dill pickles, smashed potatoes loaded with bacon & cheese and creamy coleslaw.

Order one day or order all 4. The choice is yours. Dinners are served hot and ready to eat 5-6:00 pm at The Cove on Hamblen (1101 Hamblen Road in Forest Cove). TUESDAY 8/26: Get your order in early for this one as I always sell out. Super tender Mississippi pot roast, buttermilk mashed potatoes and green beans.

WEDNESDAY 8/27: Pan seared chicken Picatta over angel hair pasta with creamy lemon/caper/artichoke sauce served with zucchini, mushrooms & tomatoes with Italian seasoning and Parmesan cheese.

FRIDAY 8/29: Chicken pillows - this recipe sounds way too good not to make. Seasoned, shredded chicken mixed with spices and cream cheese then stuffed in crescent roll “pillows” with Parmesan cream sauce on the side, rice pilaf and honey roasted carrots.
