Caramel Pecan Dream Bars 😋😋
FOR THE CRUST:
1 box yellow cake mix
1/3 cup soft margarine
1 egg
FOR THE FILLING:
1 (14 oz) can sweetened condensed milk
1 cup pecans, chopped
1/2 cup bits o’ brickle baking chips
PREPARATION
Preheat oven to 350°F and grease a 9×13-inch baking pan with nonstick spray.
Mix together the cake mix, margarine, and egg and press into the bottom of the prepared pan.
Pour filling ingredients (sweetened condensed milk, pecans, bits o’ brickle) over the base and bake 25-30 minutes.
Let cool before cutting.

Diabetic Sugar-Free, No-bake Strawberry Cheesecake

Ingredients:
1 1/2 cups graham cracker crumbs
3 tablespoons butter, melted
8 ounces cream cheese, softened
1 cup heavy cream
1/4 cup powdered erythritol or another sugar-free sweetener
1 teaspoon vanilla extract
2 cups fresh strawberries, hulled and chopped
2 tablespoons lemon juice
1 teaspoon gelatine powder

Instructions:
In a bowl, combine the graham cracker crumbs and melted butter.
Press the mixture into the bottom of a 9-inch springform pan.
In a separate bowl, beat the cream cheese until smooth.
In a separate bowl, beat the heavy cream, erythritol, and vanilla extract until stiff peaks form.
Fold the whipped cream into the cream cheese mixture until well combined.
Spoon the mixture over the graham cracker crust in the springform pan.
In a small saucepan, heat the strawberries, lemon juice, and gelatine powder over low heat until the gelatine has dissolved.
Pour the mixture over the cheesecake and smooth out the top.
Cover and refrigerate the cheesecake for at least 4 hours or overnight, until set.
Serve the cheesecake chilled, garnished with additional strawberries, if desired.
